Mexican Shrimp Cocktail Recipe
Ingredients:
⅓ cup Spanish onion, chopped
¼ cup freshly squeezed lime juice
1 pound chilled cooked medium shrimp (peeled, deveined, and tails removed)
2 roma (plum) tomatoes, chopped
1 cucumber, finely chopped
1 stalk celery, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 teaspoons salt
2 teaspoons ground black pepper
1½ cups chilled tomato and clam juice cocktail
1 cup chilled ketchup
1 bunch fresh cilantro (stems discarded and leaves chopped)
2 tablespoons hot pepper sauce
2 avocados (peeled, pitted, and chopped)

Creamy Chicken & Broccoli Bake (High Protein, Low Carb, Diabetic-Friendly)
Ingredients:
1 cup cooked chicken breast (cubed)
1½ cups broccoli florets
1 small tomato (optional)
1/4 cup shredded cheese (mozzarella or cheddar)
2 tbsp Greek yogurt or low-fat cream
1 tsp garlic powder
Salt & pepper to taste
Instructions:
Pre-steam broccoli for 3–4 mins.
Mix chicken, broccoli, tomato, yogurt, and spices in a bowl.
Transfer to a baking dish, top with cheese.
Bake at 375°F (190°C) for 12–15 mins or until golden & bubbly.

High Protein Broccoli Cheddar Soup – Creamy, Cozy & Packed with 20g of Protein
Ingredients:
1 tablespoon butter
1 large yellow onion, diced
2 large carrots, peeled and diced
1 stalk celery, diced
2 cloves garlic, minced
1/4 cup all-purpose flour (or gluten-free flour)
1/2 teaspoon smoked paprika
3 cups vegetable broth (“not chicken” style recommended)
4 cups chopped broccoli
