Yā€™all ever have that cut of meat thatā€™s the last one in the freezer?!? The one you donā€™t know what to do with?!? Well guess what? It happens here too.

We are a taco loving family but our freezer stash of ground beef is winding down (thank you to our loyal buyers!) and Iā€™d rather save what weā€™ve got for burgers on the grillā€¦in comes stew beef to the rescue. Stew beef, our bottom of the freezer, what do I do with it cut. Combine that with summer vibes and summer schedules and this crockpot recipe is saving us these days.

Two pounds of stew beef, a can of diced tomatoes, a package of taco seasoning. Three ingredients in your crockpot and walk away for the day. Return to tender, flavorful meat ready for tacos or burrito bowls. So easy. So delicious. Rumor in this house is that they are better than regular ground beef tacos. Who knew?!?
