Week 3: How about we blend the last two weeks together. If we take our clabber culture and mix some of it with the cream we skim leave it out on the counter for 24 hours lightly covered what do we get? Sour Cream! We made some for the first time last week Stephanie said a gallon was too much and guess what? Maybe it was but it is almost gone! It is outstanding flavored the tasting we get is a bit more sweet and pleasant than a store bought sour cream. So give it a try it is so easy except the waiting! Also this week is the State Wrestling Tournament in Casper Wyoming! Maybe most of you know but maybe not Oakley and Cashlee both qualified as #3 seeds, so we will be in Casper cheering most of this week! We will fill the coolers at until Wednesday and then let it ride we hope to have enough there to go around but we are just doing the best we can!

Week 2. Let’s talk about maybe something a lot probably haven’t ever heard about. Clabbered Milk! Clabbered milk is raw milk, which it has to be raw milk, that is left out to sour at room temperature for ruffly 3-5 days. As it clabbers it becomes like a jello consistency and has a rich buttery smell. From that point it is handled much like a sourdough starter where you discard and feed it daily. It is used as just a drink by itself, in baking and cooking, and in culturing cheese or also butter. We use it in bread, biscuits, pancakes, German pancakes, and the culture for our cheese also. There are a few really good videos on clabbered milk and we think it is really worth making. Pick up a gallon of raw milk and get yours started.

What is in a gallon of raw milk? We asked and got quite a bit of feedback back so we are going to start a weekly post and hopefully help generate some interest or just some extra knowledge and conversation about how you can get the most value from your raw milk purchase. It is going to start pretty basic but the idea is that with a mix of different experience levels we can generate some good discussion in the comments and everyone can do some learning and sharing. With no further waiting, our first product is simply CREAM! Everybody loves cream it is that rich thick goodness that separates and rises to the top of the bottle after milk sits and rests for a little while! But oh the things you can do with cream, some of those things we will talk about in later weeks also. Some of our favorites ways to use cream is adding some flavoring to it like hazelnut or Irish cream and use it as a creamer, whipped cream, and probably the favorite as making butter. But for some people they might be unsure how to get the cream and make it useable to try some of these products so we will add a link for a video that we feeling shows the process fairly well. All you need is a ladle or a measuring cup or even just a spoon to start with and a container to put your cream into. Because of the bottles we sell the milk in has such a small neck, to get your best results we recommend pouring your milk into some kind of wide mouth container the night before you plan to skim your milk so you can dip into the milk and have enough room for the utensil you are using. From that you just start slowly “skimming” the top of the milk. The key is to not go to deep on each time you dip into the milk and skim from one side to the other. The lower into the cream you get the thinner it will be until you get to the top of the milk and you will see bluish colored streaking. The bluish, thin streaking is the milk so you want to not scoop that into your cream. Skimming milk and taking the cream is a really good way to begin using the different parts of what milk can be used for and build confidence to try other things. What do you use cream for?
