Baked Long Eggplant Sabzi

The long eggplants are either known as Chinese or Japanese, depending on the shade of purple and length. They have really tender and soft skin and are often found in Asian, Indian, and Middle Eastern stores.

These baked eggplant slices are very easy to put together and perfect with a bowl of rice & dal or in sandwiches with some marinara sauce.

I did want to make some sandwiches the next day but they disappeared pretty quickly so will add more pictures later on the blog.

Simple Sides: Sautéed Sweet Potato

There are over 15 types of sweet potatoes around the world and all belong to the morning glory or Convolvulaceae family. All the 15 varieties look similar on the exterior, reddish-brown in color and tapered at both ends. In the US, they tend to be orange on the inside while in India they are creamy beige when sliced. Both are sweet and a dream to cook with. Sweet potatoes can be baked, roasted, fried, steamed, and can be turned into a great side dish or a dessert. Additionally, they are dense in proteins, vitamins, and fiber so use them often and freely.

Rice Noodle Salad-Indian Chinese style!

There is no mystery to this snack that can be served hot, warm, or cold. I personally prefer a hot bowl of noodles, generously topped with crushed peanuts and red chili flakes or chili oil.

I am not 100% sure where this recipe comes from but it is something we made often as teenagers in an era before ubiquitous internet, streaming platforms, and international travels.
This one can only be broadly classified as Indian Chinese. Indian Chinese cuisine is a fusion of spices and ingredients that borrows from both cultures.
There are a few pockets around India, especially in large cities like Mumbai, Delhi, and Kolkata, that are home to Indians of Chinese origin. Their numbers however are dwindling fast due to political, economic, and social reasons but Indian Chinese is one of the most popular cuisines in India and there is a range of these sweet, tangy, spicy products like sauces and masalas that can be bought in stores to create the popular Indian Chinese dishes at home.

Moroccan Red Lentil Soup

This is a warm and hearty soup with robust textures and flavors. North African cuisine offers several recipes for hearty broths that combine meat, vegetables, lentils, or chickpeas.
The use of cinnamon, cloves, and cumin is what gives this soup its unique yet familiar taste.
I love to add fresh veggies to this soup to make it a one-pot meal and usually allow it to cook overnight in a slow cooker so that there is a warm meal ready for lunches or brunches.

Quick 'n Easy Dum Aloo

This version is a riff on the classic but of course, modified to be made quickly in a pressure cooker or instant pot.

Not only is this curry delish but the teeny potatoes coated in a thick gravy look darn cute and tempting. Tear off a piece of naan or roti and scoop up one baby spud at a time.

Moong Dal Chilla

For SIX CENTURIES Western Imperialists sent their citizens to Asia and Africa to terrorize, pillage, proselytize, enslave, and dominate. And they sent the worst of their species—criminals, racists, thieves, and murderers to rule, revel, and rape.

Now, suddenly in the 20th and 21st centuries, Western narrative around migrants is focused on how to stop them, corral them in camps, send them back, or how to incarcerate them.

It was just fine to send your worst but simply unacceptable to receive the persecuted and ravaged?

Funny thing how history is forced to come full circle.

Initially I was unsure if it was just for me (because algorithms you know) or was everyone everywhere today reading about this scientist from my city, my alma mater, my mother’s alma maters (school and college) and a contemporary of my grandmother.

Dahi Pohe

This is a traditional breakfast served on the second day of Diwali, known as Naraka Chaturdashi, which celebrates the slaying of Naraka by Krishna, metaphorically killing all the evil deeds committed in the past.

I remember that as children we were coaxed out of bed at the crack of dawn, and Aai (mom) or Ajji (grandma) would massage our faces, hands, and legs with fragrant oils, followed by a coarse paste of sandalwood and saffron and send us for a hot bath. We wore new clothes as we sat down to devour a breakfast of Dahi Pohe. I make dahi pohe every once in a while through the year but most definitely on Naraka Chaturdashi.

Peanut Garlic Dry Chutney or Danyachi Chutney

This is another staple from the Marathi kitchen and is used as a side, topping, or turned into a dip by mixing with yogurt or oil.
Aai’s pantry often has 3-4 dry chutney powders and they are pulled out every day onto the dining table at dinner. Bhakri (hand-flattened gluten-free bread made from sorghum or pearl millet flour) with homemade butter or ghee, chutney, and sliced onions is was often my dinner on school nights as I wrapped up a busy evening of homework and playing in the streets with my gang of friends.

Broccoli sabzi in a yogurt sauce

This is a simple broccoli curry in a light yogurt seasoning that I Iearned while spending time with my aunt and uncle in the U.K. in the early 90s.
Kaku (aunty) made this sabzi a couple of times and at that time I was fairly new to broccoli and cooking. Kaku would meal prep for the week and weekends too as they entertained heavily. She would have her chicken and mutton marinated, masalas prepped, dal made and frozen in ice trays, and sabzis chopped, sautéed, or steamed. With two teenagers, full-time jobs, and a thick social calendar, my aunt and uncle had busy and joyful lives.
Kaku definitely role modeled meal prep for me and I did not even know it.

Pearl Tapioca and Varai Dhirde to wrap up nine days of fasting

Dhirde is a thin pancake made of a combination of rice and lentil flours that are an instant and easy gluten free snack.

My Aji (grandma) was the Queen of Dhirde and would get her flour specially ground with the exact proportions of lentils and rice that she needed. She and I had a standing dhirde date every couple of weeks where she would make these thin, perfectly round and crispy dhirdes and serve them with a dollop of homemade butter and some lemon pickle. No idea 🤷🏽‍♀️ why the rest of the family was not included on this date but I cherished the solo time with her as we chatted mainly about food.

These sabudana and varai dhirde are delicate, spongy, and light with a texture that can be addictive.

ABOUT MAIA FOODS & GHEE

I am and have been a teacher for over two decades in school and college classrooms and have taught in India, France, England and in the US. In my other life, I have been cooking for friends and family since moving to the US in 1995 from India. Recently, I launched a home based business of making and selling ghee, which I learned to make it in a ‘traditional’ manner, which means from mom and grandma, and now have added contemporary twists!

I completed my food safety training and received a certification, which allows me to produce and sell ghee from home in Colorado.

It is prepared by slowly simmering butter until the milk solids stick to the bottom and all the moisture evaporates. The resulting golden liquid is known as ghee and has been used for thousands of years in Asia and the Middle East. Known to have gut healing properties and ghee is
