If you're in the Denver Metro area we can deliver to you. If your outside of the Denver Metro area, don't worry, we can ship to you. We will just add a flat rate shipping fee to your total. Green Chile Recipe of the Week - Hatch Salsa Verde

The chile harvest has officially arrived & several vendors have Hatch mild, medium and hot chiles! Hatch Salsa Verde is a very simple, tangy and spicy cooked green salsa. It can keep for about 2 weeks or you can freeze it with no problems. That’s an advantage of a cooked salsa – they generally freeze well. All in all, I recommend drizzling this over pulled pork, pulled chicken, salmon, even shredded beef. Enjoy!

Ingredients:
1 ½ cups medium or hot Hatch chiles, roasted, peeled and seeded
2 cups coarsely chopped tomatillos
1 cup chicken broth
2 garlic cloves
1 cup packed fresh cilantro sprigs & stems
salt to taste

Directions:

Remove husks from fresh tomatillos and rinse tomatillos under warm water to remove stickiness, then chop coarsely.

In a saucepan simmer tomatillos, broth, and garlic until tomatillos are tender, about 10 minutes if using fresh tomatillos and about 5 minutes if using canned.

Add chiles to tomatillo mixture. Cool salsa slightly and in a blender pulse until coarsely chopped (use caution when blending hot liquids).

Salsa may be made up to this point 2 days ahead and cooled, uncovered, before being chilled, covered. Bring salsa to room temperature or reheat before proceeding.

Just before serving, in blender pulse salsa with cilantro until cilantro is finely chopped (use caution when blending if salsa is heated) and season with salt.

Prep time: 10 minutes
Cooking time: 10 minutes
Makes: 3 cups

New Recipe For the Week: Sour Cream Chile Cornbread

Prep time: 5 mins
Cook time: 40 mins
Total time: 45 mins
Serves: 6 - 9

What is great about this recipe is that you might usually have all the ingredients anyway (except maybe the sour cream) and it takes all of 5 minutes to throw together, then 40 minutes to bake. And everyone loves it. So if company shows up you can whip this up in no time and serve something special. This recipe is very moist - more like a spoonbread - and flavorful. It is also not low calorie; I might try it with half the butter and low fat sour cream (which of course will make it a diet recipe). You can make it with mild chiles, hot chiles, and everything in between. I think it would be best with mild to medium hot. Hot chiles just overpower the cornbread flavor.

Ingredients
•1 package corn bread mix (for 8x8 baking dish)
•1 cup creamed-style corn
•1 cup sour cream or sour half-and-half
•¼ cup butter, melted
•2 eggs
•¾ cup shredded cheese (cheddar or Monterey Jack)
•½ cup diced green chiles

Instructions
1.Preheat oven to 350 degrees.
2.Mix all ingredients in a large bowl until blended.
3.Pour into a greased 9x9 inch baking dish (I've also used a
4.x11") and bake for 40-45 minutes or until done.

Recipe of the week: Green Chile Enchilada Soup

This green chile enchilada soup recipe is similar to Tortilla Soup (a New Mexican Cuisine favorite).

Ingredients:
6-8 oz. chopped roasted hatch green chile
1 26 oz. condensed cream of chicken soup
16 oz. (1 lb.) grilled or boiled chicken breast, chopped
1 tbsp hot red chile powder
2 tbsp ground cumin
2 tbsp granulated garlic
1 medium onion
2 tbsp extra virgin olive oil
12-15 corn tortillas
2 cups crushed corn tortilla chips
26 oz. milk
1 tbsp black pepper
1 small/medium red or orange bell pepper, chopped
¼ cup shredded cheese/serving after cooked

Directions:
Sweat,sauté onion and bell pepper in a frying pan. Set aside.
Grill/boil chicken breast until cooked, chop into small pieces, set aside. Mix soup mix and milk in a large mixing bowl. Soup will probably remain chunky, this is OK.
Add chile and all remaining spices to soup mix, stir. Tear tortillas into small pieces, about 1-2 square inches each, mix into soup. Add crushed tortilla chips to soup mix. Stir until all tortilla and chip pieces are at least coated in soup mixture. Add chicken, onion and bell peppers.
Pour into a non-stick soup or stock pot, and heat on medium low heat (4 on an electric range), stirring every couple minutes to prevent sticking/burning. Heat until condensed soup is thoroughly blended and all tortilla pieces are extremely soft. Serve in soup bowls with shredded cheese.
Optional: use fajita sized flour tortillas to scoop out the soup, as opposed to a spoon.
