Zafran has come to life mainly due to my love and passion for cooking and increasing frustration at the treatment of my much loved Indian food by most commercial establishments. There is a fast growing interest in Indian cuisine but unfortunately a definite lack of choices as to availability, reasonable pricing, authenticity and quality. Typical Indian restaurants have chosen high prices, very sub
standard quality food, and extremely poor service relying heavily on serving buffets of several poorly prepared dishes. It is almost tragic for those with the ability to recognize the true flavors and spices of our homeland. One of the main objectives of this endeavor will definitely be to retain authentic recipes and prepare dishes using spices, style and techniques used by master chefs back home. Here in the US sometimes it is difficult to obtain authentic spices and ingredients but a chef with good instincts knows how to improvise. Unfortunately the prevalent use of processed, hormone enhanced produce, meat and poultry here is another factor that is keeping the true tastes of our dishes from coming through but I do believe that good quality and freshness can make a big difference in developing better flavors and taste. In my mind I wish Zafran to be a service to my community and provide an experience that is both pleasant and memorable
