My love and I have been in domestic bliss today. Up early, good coffee, a few chores, a nap and this meal.

Here's the early dinner we had.

It's a spinach and roasted butternut squash salad. I tossed the spinach in a homemade mandarin orange vinaigrette.

It's finished with tart dried cherries, roasted pumpkin seeds and sliced mandarins.

He ate all of his, then hunted down the remaining squash left in the cast-iron griddle skillet.

It's been a good day.
