Stuffed Mashed Potato Nests

These stuffed potato nests are crispy and golden around the edges, soft and fluffy inside, and packed with a juicy beef filling. My family can’t get enough of these!

Ingredients:
3–5 large potatoes
3.5 tbsp (50 g) butter
1 bunch fresh dill
Salt, to taste
Smoked paprika, to taste
Black pepper, to taste
Oregano, to taste
1.1 lbs (500 g) ground beef
1 onion, chopped
2 garlic cloves, minced
1 red bell pepper, chopped
1 large tomato, chopped
2.5 oz (70 g) tomato paste
1 bunch fresh parsley, chopped
3.5 oz (100 g) mozzarella cheese, grated

Peel and boil the potatoes in salted water until completely tender. Drain well, then mash with the butter and chopped dill until smooth and fluffy. Season with a little salt and black pepper.

While the potatoes are cooking, sauté the chopped onion until softened. Add the garlic and ground beef, breaking the meat apart as it cooks.

Add the red bell pepper, tomato, and tomato paste. Season with smoked paprika, black pepper, oregano, and a little salt. Cook until the beef is done and the vegetables are tender. Stir in the fresh parsley.

Line a baking tray with parchment paper. Spoon the mashed potatoes onto the tray and shape each portion into a little nest with a hollow in the center.

Fill each potato nest generously with the beef mixture, then sprinkle mozzarella over the top.

Bake at 375°F (190°C) until the cheese is melted and golden and the potato edges are lightly browned, about 15–20 minutes.

Serve them hot while the cheese is still melty. They’re simple, filling, and absolutely delicious!

Classic Italian Bombolini

Soft, pillowy bombolini are a beloved Italian treat with a light, tender texture and a delicate sweetness. Freshly made and dusted with sugar, these homemade donuts are perfect for breakfast, brunch, or a special dessert to share with family and friends.

2¼ teaspoons instant yeast
½ cup lukewarm milk (about 105°F to 110°F)
3 tablespoons granulated sugar
2½ cups all-purpose flour
2 tablespoons potato starch (optional)
¼ teaspoon salt
3 large egg yolks
¼ cup unsalted butter, softened
Vegetable oil, for frying
Powdered sugar or granulated sugar, for coating

In a large mixing bowl, combine the lukewarm milk, sugar, and instant yeast. Let stand for 5 minutes until slightly foamy.
Add the flour, potato starch if using, salt, egg yolks, and softened butter. Mix until a soft dough forms.
Knead the dough by hand for 10 to 12 minutes, or with a stand mixer fitted with a dough hook for 8 minutes, until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 1½ to 2 hours, or until doubled in size.
Turn the dough onto a lightly floured surface and gently roll it to about ½ inch thick. Cut out rounds using a 2½ to 3-inch round cutter.
Arrange the dough rounds on a parchment-lined baking sheet, cover loosely, and let rise for 30 to 45 minutes until puffy.
Heat vegetable oil in a deep pot to 350°F.
Carefully fry the bombolini a few at a time for 1½ to 2 minutes per side, turning once, until evenly golden brown.
Transfer to a paper towel-lined plate to drain briefly.
While still warm, coat each bombolini with powdered sugar or granulated sugar.
Serve warm or at room temperature for the best soft, fluffy texture.

Classic Homemade Crepes

These light and delicate homemade crepes are simple to make with a handful of pantry staples. Perfect for breakfast, brunch, or dessert, they can be served with fresh fruit, chocolate spread, jam, or a sprinkle of powdered sugar.

1 cup all-purpose flour
2 large eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt

In a large mixing bowl, whisk together the flour and salt.
Add the eggs and whisk until smooth.
Gradually pour in the milk and water while whisking continuously until the batter is thin and free of lumps.
Let the batter rest for 15 to 20 minutes for the best texture.
Heat a lightly greased nonstick skillet or crepe pan over medium heat.
Pour about 1/4 cup of batter into the center of the pan and immediately swirl the pan to spread the batter into a thin, even circle.
Cook for about 1 to 2 minutes, or until the edges begin to lift and the bottom is lightly golden.
Flip the crepe carefully and cook for another 30 to 60 seconds.
Transfer the cooked crepe to a plate and repeat with the remaining batter.

Crispy Parmesan Roasted Cauliflower

Golden, crispy roasted cauliflower is a simple dish that turns everyday ingredients into something truly satisfying. With a crunchy coating and smoky seasoning, it's perfect as a flavorful side dish or a hearty meat-free main course for any family dinner.

1 large head cauliflower, cut into bite-sized florets
3 tablespoons olive oil
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese (optional)
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley, for garnish (optional)

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with a little olive oil.
Pat the cauliflower florets dry with paper towels to help them roast evenly.
In a large bowl, combine the olive oil, smoked paprika, garlic powder, salt, and black pepper. Add the cauliflower florets and toss until evenly coated.
Sprinkle in the panko breadcrumbs and Parmesan cheese, if using. Toss again until the florets are well coated.
Arrange the cauliflower in a single layer on the prepared baking sheet, leaving a little space between each piece for maximum crispiness.
Roast for 25 to 30 minutes, turning the florets halfway through cooking, until they are tender inside and deeply golden with crispy edges.
For extra browning, broil for 1 to 2 minutes at the end, watching carefully to prevent burning.
Transfer to a serving platter, sprinkle with chopped fresh parsley if desired, and serve immediately while hot and crispy.

Best Fluffy Pancakes

Nothing beats a stack of warm, fluffy pancakes fresh from the skillet on a cozy morning. This easy homemade recipe uses simple pantry staples to create soft, golden pancakes that are perfect for breakfast or brunch with your favorite toppings.

1 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
1 tablespoon granulated sugar
1 ¼ cups milk
1 large egg
3 tablespoons unsalted butter, melted
Butter or oil for lightly greasing the pan, if needed
Maple syrup, fresh berries, or additional butter for serving (optional)

In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until evenly combined.
In a separate bowl, whisk the milk, egg, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients and gently stir just until combined. A few small lumps are perfectly fine. Do not overmix, as this helps keep the pancakes light and fluffy.
Let the batter rest for 5 minutes while you heat a nonstick skillet or griddle over medium heat.
Lightly grease the cooking surface with a small amount of butter or oil if needed.
Pour about ¼ cup of batter for each pancake onto the hot skillet.
Cook for 2 to 3 minutes, or until bubbles form on the surface and the edges begin to look set.
Flip the pancakes carefully and cook for another 1 to 2 minutes, until golden brown and fully cooked through.
Transfer to a warm plate and repeat with the remaining batter.
Serve warm with maple syrup, butter, fresh berries, or your favorite pancake toppings.

Crispy Zucchini and Potato Patties

These crispy zucchini and potato patties are a simple family favorite made with everyday ingredients. Golden on the outside and tender on the inside, they are perfect for lunch, dinner, or a savory appetizer that everyone will love.

2 medium zucchini, grated
1 teaspoon salt, divided
2 medium potatoes, peeled and grated
1 small onion, finely grated
1 medium carrot, grated
1 tablespoon chopped fresh parsley
2 large eggs
1/2 teaspoon black pepper
3 tablespoons plain breadcrumbs
1 cup shredded mozzarella cheese
2 tablespoons olive oil, plus more as needed for frying

Grate the zucchini into a colander, sprinkle with 1/2 teaspoon of the salt, and let it sit for 10 to 15 minutes. Squeeze out as much liquid as possible using clean kitchen towels or your hands.
Meanwhile, grate the potatoes and squeeze out any excess moisture. Place them in a large mixing bowl with the drained zucchini.
Add the grated onion, grated carrot, chopped parsley, eggs, remaining 1/2 teaspoon salt, black pepper, breadcrumbs, and shredded mozzarella cheese. Mix well until everything is evenly combined. If the mixture feels too wet, add an extra tablespoon of breadcrumbs.
Shape the mixture into small, evenly sized patties about 2 1/2 inches wide.
Heat the olive oil in a large nonstick skillet over medium heat.
Cook the patties in batches for 4 to 5 minutes per side, or until deeply golden brown and cooked through. Add a little more olive oil between batches if needed.
Transfer the cooked patties to a plate lined with paper towels for a minute before serving.
Serve warm with a fresh green salad, sour cream, plain Greek yogurt, or your favorite dipping sauce.

Classic Homemade Powdered Doughnuts

These soft, fluffy homemade doughnuts are a comforting treat with a light texture and a delicate sweetness. Freshly made and coated with a dusting of sugar, they are perfect for breakfast, dessert, or an afternoon snack.

3 cups all-purpose flour
2 tablespoons butter, softened
7 grams active dry baker's yeast
5 tablespoons granulated sugar
1 cup milk, warmed to about 110°F
Vegetable oil, for frying
Powdered sugar or granulated sugar, for coating

Warm the milk until it is just warm, not hot. Stir in 1 tablespoon of the sugar and sprinkle the yeast over the milk. Let it stand for 5 to 10 minutes until foamy.
In a large mixing bowl, combine the flour and the remaining sugar. Add the softened butter and the yeast mixture. Mix until a soft dough forms.
Knead the dough on a lightly floured surface for 8 to 10 minutes, or until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 to 1 1/2 hours, or until doubled in size.
Punch down the dough and roll it to about 1/2 inch thick. Cut out doughnut shapes with a doughnut cutter or two round cutters.
Arrange the doughnuts on a parchment-lined baking sheet, cover lightly, and let them rise again for 30 to 45 minutes until puffy.
Heat about 2 inches of vegetable oil in a heavy pot to 350°F.
Fry the doughnuts in batches for about 1 to 2 minutes per side, or until golden brown. Avoid overcrowding the pan.
Transfer the doughnuts to a paper towel-lined plate to drain briefly.
While still slightly warm, coat with powdered sugar or granulated sugar. Serve fresh for the best flavor and texture.

Fluffy Japanese Soufflé Pancakes

These light and airy Japanese soufflé pancakes are wonderfully soft with a delicate vanilla flavor. Perfect for a cozy breakfast or weekend brunch, they have a fluffy texture that melts in your mouth and pairs beautifully with fresh fruit or a light dusting of powdered sugar.

2 large eggs, separated
2 tablespoons milk
1/4 teaspoon vanilla extract
4 tablespoons sifted cake flour or all-purpose flour
1/2 teaspoon baking powder
2 tablespoons granulated sugar

Separate the egg whites and yolks into two clean bowls.
Whisk the egg yolks with the milk and vanilla extract until smooth.
Sift the flour and baking powder together, then gently whisk them into the yolk mixture until no dry spots remain.
Using a clean mixer or whisk, beat the egg whites until foamy. Gradually add the sugar while beating until stiff, glossy peaks form.
Fold one-third of the whipped egg whites into the yolk mixture to lighten it. Carefully fold in the remaining egg whites in two additions, using gentle strokes to keep as much air in the batter as possible.
Heat a nonstick skillet over the lowest heat setting and lightly grease if needed.
Spoon the batter into three tall mounds in the skillet. Cover with a lid and cook for about 5 to 7 minutes, until the bottoms are golden and the pancakes are set enough to flip.
Carefully flip each pancake with a wide spatula, cover again, and cook for another 4 to 6 minutes until golden on the second side and fully cooked through.
Serve immediately while warm with fresh berries, maple syrup, whipped cream, or a light dusting of powdered sugar if desired.

This wholesome pumpkin oatmeal bread is a simple, nourishing loaf that's perfect for busy mornings. Made without flour or butter, it's naturally gluten-free when prepared with certified gluten-free oats and packed with hearty oats, pumpkin, seeds, and dried fruit for delicious homemade flavor.

1 cup rolled oats
200–250 ml warm water
2 cups (about 400 g) peeled pumpkin, grated or cooked and mashed
1 tablespoon honey, maple syrup, or erythritol (optional)
1 teaspoon ground cinnamon
1 pinch salt
3 tablespoons vegetable oil (optional)
1 tablespoon sesame seeds
5–6 dried apricots, chopped

Add the chopped dried apricots, chia seeds, chopped nuts, and mixed seeds and dried fruit. Mix thoroughly.
