Cheesy Ranch Potatoes and Smoked Sausage:
Ingredients:
1 lb smoked sausage, sliced into rounds (or half-moons)
4-5 medium russet potatoes, peeled and diced into bite-sized cubes
1 packet ranch dressing mix (about 1 ounce)
1 cup shredded cheddar cheese (or more, if you like extra cheese!)
1/2 cup sour cream
2 tablespoons olive oil (or melted butter)
1 teaspoon garlic powder
1/2 teaspoon paprika (optional, for added flavor)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Optional: 1/2 cup diced onion
Optional: 1/2 cup diced bell pepper
Instructions:
Preheat Oven and Prepare Pan:
Preheat oven to 400°F (200°C).
Grease a 9x13 inch baking dish (or a similar size) with cooking spray or oil.
Prepare the Potatoes:
Peel and dice the potatoes into bite-sized cubes.
In a large bowl, toss the diced potatoes with olive oil (or melted butter), garlic powder, paprika (if using), salt, and pepper.
Add the ranch dressing mix and toss to coat evenly.
Cook the Sausage (Optional):
If you prefer your sausage to be extra crispy, you can cook it in a skillet over medium heat for a few minutes on each side before adding it to the casserole.
Or, you can add it directly to the casserole.
Assemble the Casserole:
Spread the seasoned potatoes in a single layer in the prepared baking dish.
Arrange the sliced smoked sausage over the potatoes.
Optional: Add diced onion and bell pepper to the dish now.
Bake:
Bake for 30-40 minutes, or until the potatoes are tender and golden brown.
Add Cheese and Sour Cream:
Remove the casserole from the oven.
Sprinkle the shredded cheddar cheese evenly over the potatoes and sausage.
Dollop the sour cream over the cheese.
Return to Oven:
Return the casserole to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Garnish with chopped fresh parsley.
Serve hot.
