Beans, beans, they’re good for your heart. The more you eat, the more you… well, you know the rest. 🫘
Fiber might not be the most exciting thing to talk about, but the foods that contain it certainly can be. Beans are one of our favorites: naturally rich in fiber and plant-based protein, incredibly versatile, and an easy way to add something nourishing (and delicious) to your plate.
They’ve also been getting some well-deserved attention thanks to the Dense Bean Salad. Coined by recipe creator , the idea is simple: beans tossed with plenty of vegetables, herbs, and a flavorful dressing for a hearty salad that only gets better as it sits.
To inspire a little more bean-eating, we’re giving away a Steve Sando and the Rancho Gordo staff Heirloom Bean Variety Pack to one lucky winner! 🎉
Rancho Gordo is known for sourcing and growing heirloom beans with exceptional flavor, texture, and history behind them. Founder Steve Sando started selling heirloom beans at farmers markets, and today Rancho Gordo works with small farms in the U.S. and Mexico to help preserve unique varieties that might otherwise disappear.

Rich and full-bodied, Rancho Gordo’s Christmas Lima Beans are an unusual take on the classic lima, with a distinctive velvety, chestnut-like texture. They become creamy with continued cooking and hold their own alongside bold flavors, making them especially good in soups, salads, casseroles, curries, or dishes with mushrooms and cheese.
Even Rancho Gordo calls these a favorite for converting people who think they don’t like lima beans.
Rich, creamy, and mild, Rancho Gordo’s Yellow Eye Beans cook up soft and smooth with a distinctive russet potato-like texture. Their mild flavor makes them incredibly versatile, taking on the flavors of whatever they’re cooked with.
