What is a Picanha? We get this question a lot, so hereโs a little video to show where the Picanha comes from: the top butt (sirloin). The Picanha sits at the top of the sirloin and has a fat cap. While the sirloin is fairly lean, the Picanha gets a lot of flavor from the fat cap. How to cook a Picanha? Make some marks with a knife on the fat cap, season with coarse salt and sear on both sides quickly. Place on your grill on indirect heat until internal temperature reaches 120F. Let it rest for 5-10 minutes before slicing. Enjoy!
