Highside Distilling A small family owned and operated craft distillery in the heart of the Pacific Northwest, making Single Malt Wh***ey, Gin, and Amaro. Bainbridge Island, WA.

Inspired by a trip to the Highlands and Speyside regions of Scotland and the craft beverage culture of the Pacific Northwest, the idea for Highside Distilling was born. Our mission is to provide a uniquely Pacific Northwest experience to the time-honored craft of fermentation, distillation, and aging of spirits. Whether it be Single Malt Wh***ey, Gin, or Amaro, all of our products are a nod to tradition, with a unique character that captures and defines the spirit of this great region.

Our latest Nocino, finished in our own Single Malt Wh***ey barrels, drops this Friday 10/16. Swing through this weekend to sample our latest favorite seasonal liqueur and try out some new fall cocktails.

SHE’S BAAAACK! After a few months without Nocino, our seasonal green walnut liqueur will be back in stock starting this Friday. AND this year’s release is truly something special - finished in our own Single Malt Wh***ey barrels.
As if this wasn’t already the perfect companion to your Black Manhattans, the added barrel character adds a depth of flavor and softness that we’re super excited to share with you.
No big release event with this one, but supplies will be a bit more limited this year. Swing through this weekend to sample the latest batch and a few new cocktails we’ve made to highlight the release. CHEERS!

Mark your calendars — Saturday, September 26th, 2–5 PM.

We’re releasing our first-ever Double New Oaked Single Malt, with complimentary pours for everyone who comes through the door. Joining us for the afternoon: Salish Sea Greens Kelp Seasonings & The Little Pearl Oyster Bar and The Little Pearl Oyster & Raw Bar by Salish Sea Greens , with freshly shucked oysters available for purchase — pair them with a pour or a cocktail and make a real afternoon of it.

Open to the public, no membership required to come taste it. (Though if you fall in love with it, you’re welcome to join the Single Malt Society on the spot to take a bottle home.)

Most wh***ey is a blend of barrels for consistency. Single-cask means it’s all from ONE barrel — nothing blended away, nothing evened out. That’s exactly what we’re building toward for Sept 26. 🥃.
