So how does this work? I will try to break it down.
We sell our whole and half steers as a live animal purchase, which avoids the use of a USDA processing plant. The steers we are growing were either born and raised on our family owned farm or purchased from local farmers through Arkansas Cattle Auction.
We try to harvest our cattle when they weigh 1100 to 1300 pounds.
-The live weight is obviously the weight of the live animal.
-The hanging weight is the weight after the blood, hide and inedible parts are removed.
-The hanging weight is 59%-62% of the live weight.
-The cut weight is the weight of the actual meat after it is dry aged. The cut weight is 15% less than the hanging weight due to water evaporation during aging, saw cuts, and removal of ligaments, tendons and gristle.
We sell our live cows at $6/pound hanging weight. Which computes to $7/pound actual take home, still saving tons from grocery store prices!
Keep in mind not every animal will weight the same at the beginning or shrink the same. We also require a non refundable deposit of $500, which will be deducted from your total cost.
