recipe this week! Stir fry with rice vinegar, soy sause and maple syrup - a mix of garlic scapes, eggplant, and summer squash.

Saute the summer squash and then towards end just get the garlic scapes bright green slightly cooking them.

Remove that from the pan and pan fry the eggplant then add the sauce.

You can mix the starch directly with the eggplant with oil in a bowl instead of doing the slurry. And the sauce still thickens when added that way.

Add the sauce before you put the other veggies back in.

Served over rice with a fried egg, diced summer onions and sesame seeds. So good.
