Working with farmers to collaborate on ideas and menu items for the restaurant has always been in the plan for Underground Pizza. Maryland has such an amazing agriculture and farmers’ market system and working with some of the best farms and the best flavors available has been part of Underground Pizza’s success over this years.
One of my favorite Maryland Farms is and while we’ve used their black garlic on the menu for a couple years, only recently discovered I trained with one of the amazing farmers behind One Straw. After a few conversations and a taste of one of our sandwiches, he and I knew we had to collab on a sandwich.
This week’s sandwich is going to be a Caprese Sandwich using Row 7 Seed Company Midnight Roma, hand pulled fresh mozzarella (first time we’re making our own cheese), cherry bomb pepper spread (its not spicy, I promise), and fresh basil 🌿 . The tomatoes 🍅 , peppers 🌶️ , and basil were all grown by 🧑🌾
You can check One Straw out at the 32nd Street Farmers Market on Saturdays and the Catonsville Sunday Farmers Market on Sundays.
