Beef cutting day was Monday. These ribeyes came off exactly where we want them, at 1.5 inches thick, every time.

That’s the spot where you can get a really nice sear on the outside and the inside will still end up pink and juicy, not overcooked before the crust even forms. Thinner cuts don’t give you that room, you fight the clock the whole time it’s on the heat.

Reverse sear if you have the patience, hard sear if you don’t. Either way, let the steak thickness is do the work for you.

Simple as that.

We’re packing up preorders for tomorrow’s Market!

We have a regular Market Menu, it’s the beef favorites we know everyone loves, or the beef they want to try when they meet us for the first time. Works great.

Others know exactly what they want, things like extra large size steaks, or ones that sell out fast, or even bone-in steaks like porterhouses. They put an order in on the website and pickup during market hours. Works great!

No matter which way you prefer, we’re just thankful to be your farmers. You’ve given us the best job in the world.

We all need a good life hack, this has been one of mine!

The best way to cook bacon isn’t in the pan, it’s in the oven.

Baking bacon allows the fat to render slowly and evenly, ensuring every slice is perfectly crisp without the burnt edges or rubbery centers. Plus it’s a whole lot less messy. (Except for when you clean your oven, ahem.)

It was a perfect weekend for crop touring.

The corn is looking strong, and the third crop alfalfa started hitting the ground yesterday. Planning to start chopping haylage at 8am today, so it looks like it’ll be a busy stretch for a bit.

Plus, Fair Week. It’s own chaos of life.

But overall, it is a rewarding circle, growing the best feed we can to provide for the cows that take care of all of us. 💚💙

My new obsession has a cheat code.

Hello, German Burger.

It lands somewhere between a juicy burger and a seasoned meatball sandwich, with just enough familiar comfort to feel easy and just enough of a twist to feel fun.

Serve on a warm pretzel bun with grainy mustard, melted Swiss cheese, bacon and caramelized onions (they’re worth the extra effort) and you’re in business.

You don’t have to guess what’s in your grocery store meat, and you definitely don’t have to waste time running around for it.

Our La Crosse Home Delivery route is out right now (between 9:00 and 3:00), bringing clean, traceable beef, pork, and dairy straight from our Bangor pastures to your porch. If you can't make it out to see us in person at one of the Farmer's Markets we attend, this is the perfect way to still support your local farmer and keep your kitchen stocked.

We have open spots for next week, and it's so easy it's foolproof:

You don’t need to be home: Everything is well packed in insulated liners with extra frozen gel packs. Leave out a hard sided cooler where we can drop the delivery and it can sit happily on your porch until you get back. Unpack promptly into your freezer when you return.

Easy order options: Choose La Crosse Delivery on Wednesdays ($50 minimum), Nationwide Shipping (order by Monday at noon), or quick On-Farm Pickup (available almost every day, same day).

Johanna is officially restocked and heading back to the market with her littlecreek tallow skincare products.

She’s been working hard for over a year creating deodorants, eye creams and lip balm made right here on our farm from all natural beef tallow. Beef tallow is ultra moisturizing without being greasy. We love it for dry summers and winters!
