And here’s a nice recipe for beef and cannellini bean minestrone, based on a collagen peptide-rich beef bone broth! The recipe is very adaptable, and you can lean into spring by using the first fresh greens and herbs to give it a springy, nutrient-packed slant.

If you’re curious about cooking with some less-used animal parts, we recently enjoyed this very simple Vietnamese pig trotter soup (Canh Giò Heo). We would recommend simmering the pig trotter rather longer than the two hours suggested (some sources say 3-4 hours will do it to break down the colla...

This is a home-made ricotta, with added sun-dried tomatoes, dried oregano and garlic, making for a nice festive cheese to put on the table.  The process couldn’t be simpler. You can use store-bought whole milk, and heat it to 195 degrees Fahrenheit. Add lemon juice until it curdles, and strain o...

Last year, the piggies were in the pasture up by the arena, and after Halloween, everybody fed them their pumpkins that had been carved and weren't good to eat any more. These were enthusiastically demolished, and a few seeds got dropped on the floor, or made their way out the other end--and we ended up with quite the little pumpkin patch!

The goats are in that pasture now, and while we tried to keep goats and pumpkins separate with a little electric fence, it apparently takes more than that to keep goats away from something tasty. So we mounted a hasty rescue mission, and now the pumpkins are sitting as safely as we could manage on top of a box to finish ripening in the sun. Don't worry, the goats did OK out of it too--there were a few they got to before we rescued them, and they got to finish them off. Here's to Halloween!

Use it up, wear it out... Daniel has been using some of the willows growing on the farm to hand-weave a new garbage bin! It's an interesting, traditional process, making good use of sustainable materials. What's more, since willow roots so readily, he's planning to stick the offcuts into the ground to grow another crop for next year! Talk about sustainable!

Arayes are Lebanese meat-stuffed pita bread halves served with a tahini and yogurt sauce.  This is a fast, accessible and clear recipe; my one complaint is that it doesn’t highlight fresh herbs as much as I would. To remedy that you can use fresh parsley, and try scallions for the onions (inste...
