When you take your daughter to Olive Garden and now shes loces the Chicken Gnocchi Soup. After endless bowls yesterday and her bowl home she still wants more.

Ingredients



• 2 tablespoons salted butter

• 2 tablespoons olive oil

• 1 pound chicken breast , or chicken tenderloin

• 1 cup yellow onion, diced

• 2 tablespoons all-purpose flour

• 1/2 teaspoon sea salt

• 1/2 teaspoon freshly ground pepper

• 1/2 teaspoon Italian seasoning

• 1 teaspoon dried thyme

• 4 cups chicken bone broth

• 32 ounces Gnocchi, (2 packages) or 1 package for a thinner soup

• 2 cups baby spinach leaves, rinsed and pat dry

• 1 cup grated carrots and celery

• 2 cup heavy cream

• fresh parsley for garnish, optional

Instructions



• Add butter and olive oil to a large stockpot or Dutch oven and heat over medium heat. Add chicken and brown well on each side. Reduce heat and cook several minutes longer, if needed, to cook chicken all the way through (165°F internal temperature). Remove chicken from the pan and set aside.

• To the same pot, add onion and saute until onions are soft and translucent. Add additional olive oil if needed for cooking, but there will likely be enough leftover from cooking the chicken.

• Add carrots to the cooked onion and saute 2-3 minutes.

• Add the flour, salt, pepper, and Italian seasoning to the onions and carrots and saute for 1-2 minutes to brown the flour.

• Slowly pour in chicken broth, stirring to combine the flour mixture evenly into the broth. Add milk and heat mixture, stirring frequently, until soup comes to a simmer and begins to thicken just slightly.

• Add gnocchi and simmer about 10 minutes longer until gnocchi is soft and floats to the top of the pot.

• Stir in spinach, chicken (cut into pieces), and heavy cream. Heat all of the ingredients through and serve.

• Garnish with chopped Italian parsley, if desired.

1/2 cup instant ice coffee
Mix with 2 cups hot water
1 1/2 cups sugar mix til dissolved
Add 1/2 cup creamer fill rest way with milk

Homemade Chilled Fruit Cups

These can be frozen or just in the refrigerator.
8-10 strawberries 🍓
Jar of Mandarin orange 🍊 with juice
Can of diced Pineapple 🍍 with Juice
2 whole banana 🍌
And 1/2 Orange 🍊 Juice
And I threw in a few Cherry 🍒 in some of them
Mixed all together and placed in containers

Protein Yogurt Jello Cups or else its know as Fluffy Jello.

Pick your flavor of jello and mix it with hot water til its dissolved and wait for it to cool down room temp. Then switch the cold water step with Vanilla or Plain Greek Yogurt and chill.

CUCUMBER DIP

Ingredients

• 1 to 1 ½ ripe cucumbers finely chopped

• 8 ounces cream cheese softened

• ½ teaspoon garlic powder

• 1/4 tsp salt

• ½ teaspoon dill fresh dill is best, but dried dill works too

• 1 teaspoon Worcestershire sauce

Instructions

• Finely chop your cucumbers and place them in a bowl. Let them sit for 20-30 minutes to release excess water.

• Drain off any extra liquid from the cucumbers. You can gently press them with a paper towel if needed to remove additional moisture.

• In a bowl, combine softened cream cheese, garlic powder, salt, dill, and Worcestershire sauce.

• Fold in the prepared cucumbers until everything is well combined.

• Refrigerate for at least 30 minutes before serving to allow the flavors to come together.

Round 2 of pickles is completely 5 quarts Garlic Dill Pickle Spears and 1 quart of chips. If you want any please let me know i have another batch cucumbers need to process and more growing on the vine. If you just want cucumbers let me know.
