We're back! I thought I had several scheduled out, but alas technology got the best of me once again.

CAKE MIX PUMPKIN MUFFINS

15 oz box of yellow cake mix
15 oz canned pumpkin
1 tsp pumpkin pie spice
1/4 tsp cinnamon
Brown sugar for topping (optional)

Beat together cake mix, pumpkin puree, pumpkin pie spice and cinnamon until combined.

Line a muffin tin with muffin liners.

Distribute batter evenly into the 12 muffin cups.

Sprinkle the tops of the muffin batter with brown sugar

Bake at 350 for 22-25 minutes or until a toothpick comes out clean.

There are so many recipes that we have tried over the years that I remember, but this one I actually don't. But it sounds delicious.

BUTTERCUP SQUASH COFFEE CAKE

STREUSEL:
1/4 c packed brown sugar
1/4 c sugar
1/4 c all-purpose flour
1/4 c quick-cooking oats
1 1/2 tsp ground cinnamon
3 tlbs cold butter of margerine

CAKE:
1/2 c butter-flavored shortening
1 c sugar
1 c mashed cooked buttercup squash
1 tsp vanilla
3 c all-purpose flour
2 tsp baking powder
1 1/2 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp ground ginger
1/4 tsp ground nutmeg
Pinch ground cloves
1/2 c unsweetened applesauce

GLAZE:
1/2 c confectioners sugar
1/4 tsp vanilla extract
1 1/2 tsp hot water

Combine the first six ingredients. Cut in butter until crumbly and set aside.

In a mixing bowl, cream the shortening and sugar. Beat in eggs one at a time. Beat in squash an vanilla. Combine dry ingredients in separate bowl and gradually add to creamed mixture. Spoon half into a greased 9-in spring form pan. Spread applesauce over batter and sprinkle with half of the streusel. Spoon remaining batter evenly over streusel and top with remaining streusel.

Bake at 350 degrees for 50-55 minutes until cake tests done. Cool for 10 minutes and remove the sides of the pan.

Combine glaze ingredients and drizzle over coffee cake. 10-12 servings.

When Mom sent me this recipe, I asked her if these were good. She said, and I quote, "You guys ate them and didn't notice any difference."

Guys. She snuck them in our food so we would get even more vegetables. And it's not like any of us didn't like vegetables. We just had no idea we were eating extra pumpkin.

So I share this recipe with you in the hopes that you will at least tell your family they're eating pumpkin in their burgers, but I guess that's up to you!

PUMPKIN BURGERS

1 1/2 lbs ground beef
1 medium onion (finely chopped)
1 12-oz jar of chili sauce
1/2 c canned pumpkin
1 tsp salt and pepper
1 tsp pumpkin pie spice
1 10 3/4 oz can tomato soup

Mix together and make your burgers like normal.

Pumpkin Snickerdoodles

1/2 c salted butter
1 egg
1/2 c pumpkin puree
3 c flower
1 tsp cream of tarter
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice

Cinnamon/Sugar Mixture
2 tlbs sugar
2 tsps cinnamon

Preheat to 350
Cream together sugar and slightly soft butter
Add flour, cream of tarter, baking soda, salt & pumpkin pie spice
Mix until a dough is formed
Mix together sugar and cinnamon mixture
Roll dough into 1-inch balls then coat in cinnamon sugar mixture
Put dough balls on parchment lined cooked sheet
Lightly press down on the dough balls
Bake for 10-13 minutes

First installment of some of our favorite recipes!

We don't have a title for this series, so feel free to suggest some titles for the recipe threads.

This one comes from Sherri (as most will because she bakes more than all of us)

Pumpkin Spice Crumb Cake

Cake:
2 c flour
3 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
A pinch of cloves
1 1/4 c pumpkin puree
1/2 c butter
2 c granulated sugar
2 eggs
1 tsp vanilla
1 c milk

Crumbs:
1/2 cold butter cubed
1 c light brown sugar
1 c flour
1 tsp cinnamon
1/2 tsp nutmeg

Preheat to 350 and grease 9x13
Cake:
Whisk flour, baking powder, salt, cinnamon, ginger, nutmeg & cloves
With mixer, beat together butter & pumpkin until distributed evenly
Add sugar & beat until well combined
Beat in eggs & vanilla
Add flour mixture in three separate additions, alternating with milk
Beat on low until no white remains
Set aside.

Crumbs:
Combine all ingredients in bowl and use fingers or pastry cutter to cut in the butter until it forms small crumbs
Pour half the pumpkin batter into greased pan, layer with half the crumbs and then the remainder of the batter
Top with the rest of the crumbs

Bake 45-55 minutes until toothpick comes out clean

We’re replacing some things this year. Picnic tables are one of the offerings we have that gets used the most out at the patch. We love to offer you a place to sit, but those old tables weren’t going to cut it for another year!
