These are pork chops from my oldline hogs. They have tremendous color as well as superior marbling. These chops are from hogs that have documented DNA markers. My hogs are homozygous dominant for CAST 249 and CAST 638. These markers are for higher tenderness, lower cooking loss, higher pH, and higher moisture in the cured ham. My Durocs are homozygous dominant for CCKAR, which insures 3% fewer days to market. My Durocs are homozygous dominant for F4 Ecoli disease resistance. Brown's Durocs are unique.
