Hey everyone! 💚 It’s been a little while since our last update, and we’re sorry we’ve been so quiet! Fair warning, this is a long one. Apparently we have a LOT to catch you up on!

It’s been a busy couple of weeks for our family, as Katie said goodbye to her career in social work and Parker & Riley headed back to school!

We also wanted to give you an update on the bakery. Unfortunately, once we got further into renovations, we discovered that the damage to the floors was more extensive than we originally expected. Because we want to make sure everything is done right before we open our doors, our opening date has been pushed back to early September.

It’s a little disappointing because we are SO ready to welcome everyone into P. Riley’s, but we’re getting closer every day! 🚂💚 We should be able to get a lot accomplished this week, and we’re excited to finally start sharing more progress with you again.

Thank you so much for being patient with us, cheering us on, and following along while we bring this little train car back to life. We promise we’re still here, still working, still baking, and getting closer and closer to opening those doors! 🥐🍪🧁

🚂 Station Update!

Today’s headline: WE HAVE ELECTRICITY! ⚡️

The train car officially has power, which means renovation time! The countdown is starting to feel very real, and seeing the lights come on felt like bringing life back to a place that has meant so much to our community.

Pretty soon it’ll smell like fresh bread, cakes, and pies instead of construction dust… and I think we can all agree that’s a much better smell. 😉

I may have found my favorite cheesecake… ❤️

Meet our Biscoff® Cookie Butter Cheesecake.

I’m pretty sure this one disappeared faster than anything I’ve made so far. My official taste testers barely left me a single bite… and I’m still a little offended. 😂

Before anyone asks… yes, it’s a little thinner than what we’ll be serving. We’ve been testing so many breads, cookies, pies, cheesecakes, and everything in between that our waistlines politely requested we scale these test batches back a bit. 🤣 The bakery version will be nice and thick!

When P. Riley’s opens, you’ll be able to order this as:
🚂 Individual portions
🚂 Small cheesecakes
🚂 Medium cheesecakes
🚂 Large cheesecakes

Right now we’re having so much fun testing flavors and recipes, and I can’t wait to keep sharing sneak peeks of everything that will be making its way onto the menu.

And a little renovation update… this week is a big one! The electricity is finally getting turned on, which means we can officially start renovations and begin transforming the train car into P. Riley’s. Every week it feels a little more real, and I’m so excited to bring you all along for the journey.

A bowl of no-bake cookies is basically just a bowl of oatmeal… right? 🤔

In all seriousness, this is my mother’s no-bake cookie recipe, and it’s one of those recipes that just feels like home. ❤️ Nothing fancy, nothing complicated—just the kind of recipe that’s been made over and over because it’s that good. Some recipes are worth keeping exactly the way they’ve always been, and this is definitely one of them.

Getting to share family recipes like this is one of my favorite parts of creating P. Riley’s. I hope when you take a bite, it reminds you of someone’s kitchen you loved growing up… or maybe becomes a tradition in your own.

Now excuse me while I “quality test” a few more spoonfuls. 😉

We are truly overwhelmed by the love and support our community has shown since announcing P. Riley’s Bakery & Company just 24 hours ago. Every comment, share, and message has meant so much to our family. Thank you for welcoming us so warmly aboard this journey! 🚂

One of the questions I’ve been asked most often is: 𝘞𝘩𝘢𝘵 𝘸𝘪𝘭𝘭 𝘺𝘰𝘶 𝘣𝘦 𝘰𝘧𝘧𝘦𝘳𝘪𝘯𝘨?

While our menu will continue to grow and evolve, you can expect a delicious mix of cookies, pies, breads, fudge, pastries, cakes, brownies, muffins, cake pops, candies, and more. We plan to feature a rotating menu of flavors and seasonal specialties, so there will always be something new pulling into the station.

We know that many people have dietary restrictions or food sensitivities, and that’s something that is especially important to our family. As someone who has dietary restrictions myself, I understand how meaningful it is to find options you can enjoy with confidence. While our menu will vary, we plan to regularly offer gluten-free, dairy-free, egg-free, sugar-free and other specialty items as part of our rotating selection. We’re excited to continue expanding these options over time and welcome feedback on what you’d like to see offered.

We also believe the best ideas often come from the people we serve. Your feedback will help shape our menu, and we look forward to hearing what treats and flavors you’d love to see make their way down the tracks.

In addition to our baked goods, we’ll be offering freshly made breakfast biscuits prepared right here in our bakery, with options like bacon, sausage, egg, and more. As we grow, we hope to expand our selection with additional breakfast favorites and seasonal offerings along the way.

To give you a glimpse of what’s ahead, we’re sharing a few photos of items that may appear on our rotating menu. These are just a small preview of what’s coming as we prepare to open our doors.

We’re so excited to continue this journey with all of you. The tracks are leading us home, and we can’t wait to share something special with the community we love.

Hello, Batesville!

Now that the lease has been signed, we are ecstatic to announce that P. Riley’s Bakery & Company is coming to Batesville, Arkansas in late August, 2026! We’re proud to be settling into the iconic train car diner on Jennings Lane, which is a beloved Batesville landmark.

What started as a dream has grown into something much bigger than we ever imagined, and we are so grateful for the support, encouragement, and excitement we’ve already received from this wonderful community. P. Riley’s is more than a bakery. It’s a reflection of the things we value most: family, comfort, hospitality, and good food shared with the people you love.

Our goal is to provide handcrafted breads, desserts, and sweet treats that become part of life’s meaningful moments, whether that’s gathering around the dinner table, sharing dessert with friends, celebrating milestones, welcoming neighbors, or simply ending a long day with something comforting. We believe food has a special way of bringing people together, and we are honored to be a small part of those moments.

We also believe that you should feel confident in what you’re eating. Transparency, quality ingredients, and honest baking practices will always be at the heart of what we do. We want our customers to know exactly what they’re bringing home to their families and to feel comfortable asking questions about our products.

At P. Riley’s, you’ll find a variety of homemade favorites, including breads, brownies, cookies, pies, seasonal specialties, and many other treats we’re excited to share with the community.
