What actually are microgreens? 🤔🌱
If you’ve seen these at a local market or online, it’s easy to assume they are just a fancy garnish used to make a plate look pretty. But there is a lot more to them than that.
Microgreens are simply vegetable and herb crops harvested just a week or two after they germinate, right when their very first leaves develop. Because they are harvested at this exact moment, the plant packs all the energy, flavor, and nutrients it would need to grow into a massive vegetable into a tiny, concentrated shoot.
Studies show that these little greens can be up to 40 times more nutrient-dense than their fully-grown counterparts. Eating a small handful of broccoli or radish microgreens gives you a massive hit of vitamins (like A, C, and K) and antioxidants without needing to eat a giant bowl of salad.
The best part is they aren't complicated to use. You don’t have to cook them or spend time preparing them. You grab a handful raw and throw them on top of things you’re already making:
-Tucked into sandwiches, wraps, or burgers
-Piled on top of scrambled eggs in the morning.
-Tossed onto tacos or a hot pizza right when it comes out of the oven.
-Blended straight into a morning smoothie for a quick nutrient boost.
They all have their own distinct profiles too—radish microgreens taste exactly like a crisp, spicy radish bulb, while pea shoots are sweet and crunchy.
