Most people know Courville’s for our catering,
concerts and No-Cook meals, but many don’t realize we’ve been making our own homemade smoked sausage for decades. It’s what sets our gumbo apart. It’s one of the things that is unmistakably “Courville’s.”

Using family recipes that have stood the test of time, our sausage is made and smoked right here in-house and offered in a variety of unique flavors. Whether you’re feeding employees, treating teachers, delivering breakfast to customers, or showing appreciation to a crew, we’ve got you covered.

You can pick up sausage a few different ways…

Our HOT breakfast sausage comes in limited flavors and is sold by the pound - only needing about 15 minutes for us to prep and have ready for you, Monday - Friday. It can be packaged however you’d like, but it’s most commonly boxed in individual one/two-pound portions for easy delivery to offices, schools, customer accounts, job sites, and businesses. Each order comes complete with honey and mustard for serving. Texas toast is an optional add on as well! We typically take orders until 10AM and most of our regulars call and place orders a day prior.

Our FREEZER STOCK in our market offers even more! 👍🏼 We have all sorts of additional flavors for your own sausage spread, freezer or dinner table. Our market is stocked with varieties that you can take home and cook yourself. See the list here! ⬆️

Here's the thing -

Monday is Cali's "Death Row" Chicken Spaghetti Night and we alwaysssss sell out of it. It's a crowd fav, it's like the gift that keeps on giving because it stretches to more than one night and it's so deliciously cheesy & creamy - BEST FLAVA EVER! Combine it with our Southern Green Beans, Cucumber Tomato Salad, Garlic Knots AND the Salted Caramel Cookies and you got a recipe for BEST MONDAY EVER!

❤️ It's MEATLOAF DAY!!!! ❤️👏 You guy's LOVE our homemade meatloaf (mainly that tangy glaze) and we have a few left for today! If you have never done our meatloaf, YOU SHOULD! There is no other! It can turn the most devoted anti-meatloaf eaters into meatloaf lovers...mark my words! 😍
