🔥 Wagyu Skirt Steak with Chimichurri Sauce Recipe
Marinade:
- 1/3 cup balsamic vinegar
- 2 tbsp. olive oil
- 2 garlic cloves, diced
- salt and pepper
- 1 onion, diced
Chimichurri sauce:
- 1 cup cilantro, chopped
- 1/2 cup parsley, chopped
- 1/3 cup olive oil
- 2 tbsp. red wine vinegar
- 2 garlic cloves, chopped
- 1/3 Jalepeno, chopped
-salt
Marinate skirt steak overnight to intensify the flavor.
Can also make Chimichurri ahead of time.
When you’re ready to cook, heat a cast iron skillet over medium-high heat with a drizzle of olive oil until just smoking. Place your Wagyu skirt steak in the pan and sear for 3–5 minutes per side, developing a rich, flavorful crust while keeping the center perfectly medium-rare.
Transfer the steak to a cutting board and let it rest for 5 minutes—this locks in those incredible juices. Slice against the grain for maximum tenderness, then finish with a generous spoonful of fresh chimichurri.
