This morning we took several steers to the processor.

We like to move cattle first thing in the morning when it’s cooler and quieter to help reduce stress. We never use hot shots, and we instruct our processor not to use them either.

One reason is to help prevent what is known as a “dark cutter.” When cattle experience excessive stress before processing, they can use up the glycogen (stored energy) in their muscles. This can result in beef that is darker in color, less tender, and has a shorter shelf life.

These steers have been handled multiple times throughout their lives, making them comfortable around people, trailers, and routine farm activities. That familiarity helps create a calmer experience on processing day.

Taking the extra time to handle cattle properly isn’t just better for the animals. It’s also an important part of producing high-quality beef.

To the one who does it all!

Thanks for always keeping this family, farm, and herd running. We may mysteriously disappear when it’s time to check cattle, and somehow when we hear your truck pull in, we’re all suddenly busy and working hard. 🤣

Thank you for setting a great example for the kids, teaching us the value of hard work, and keeping us all on our toes. Whether it’s fixing fences, checking cows, hauling hay, or making sure everything gets done, we know this place wouldn’t run without you.

We appreciate you more than we probably say!

Happy Father’s Day! ❤️

Freezer beef math can be confusing—we get it!

No, a 1,400 lb steer doesn’t become 1,400 lbs of beef in your freezer. And no, you can’t get all steaks out of a steer! 🤣

Check out the graphic below to see how live weight becomes *estimated take-home beef and why pricing is based on hanging weight.

Questions? Send us a message we’re always happy to explain the process.

Reserve your beef for our June 23rd processing date!

🇺🇸 Knee High by the Fourth of July!

The kids are keeping an eye on the corn and tracking its growth with a weekly picture.

This year’s crop is looking good, and the steers are already counting on it. Great steaks start long before the grill—growing quality feed is part of the process.

Yesterday was weigh day for the steers to check their progress! Last steer we ran through, everyone took guesses on their weights — and Cole ended up being the champion guesser!
