Mushroom Spotlight: Pink Oyster
This breathtaking tropical and subtropical mushroom is our summer favorite. It brings a stunning pink hue to our grow house, and while that color does fade when cooked, its delicate buttery flavor and tender texture keep it as the star of the show.

We recommend them baked at 375°F for approximately 30 minutes after a light toss in olive oil, with either a touch of salt, or just as-is. Pairing them with some fresh arugula, and some sliced avocado on a toasted baguette is a nice touch, or enjoy them on their own.

Mushroom Spotlight: Lion's Mane
Tender and with a lobster-like texture, this mushroom is a convincing meat substitute or iconic on its own. Popular as a "crab cake", we also recommend trying it as a steak! Take the whole mushroom and press it in a pan on low to medium heat with no butter or seasoning until it shrinks in size by about a third. (A second pan or a spatula are great tools to use to press it down!)
Then add rosemary, garlic cloves, and butter or your favorite cooking oil. Spoon the butter/oil over the Lion's Mane steak and flip once to make sure both sides get cooked evenly.
Enjoy with fresh asparagus, zucchini, or garlic scapes sauteed on the side.

Cascadia Mushroom Spotlight: the Italian Oyster.
This cute brown-capped Oyster variety is buttery and mild, perfect in a quiche or fried up with Asparagus to round out a spring meal. Larger caps can even be marinated and grilled to make a delicious burger patty!
We'll have them at , both as a grow at home kit and bagged fresh! Moms love them!

Cascadia Mushroom of the week for Spring- The Coral Tooth!
This delicate, fluffy cousin of the Lion's Mane is a sweet and delicious mushroom reminiscent of crab.
We recommend Coral Tooth sauteed with fresh garlic, or paired with leeks in a light cream sauce and pasta.

We'll have lots of it at the Bellingham Farmer's Market tomorrow! Bring your smiling faces and enjoy 🍄☀️
