We’re not sure if it’s the weather, a summer infatuation, or perhaps the increasing relevance of its namesake, but we’re unreasonably excited about this batch of “Havel Forever,” our Czech-style 11° Pilsner dedicated to the late, great Václav Havel. As the brewers of a diverse array of European style Pilsners (German, Polish, Czech 10°, 11°, 12°, oh my!) we’re constantly thinking about a sense of balance and how it affects the drinkability of a beer.
Brewed with a triple decoction mash, Bohemian Pilsner malt, and Czech Saaz and Sladek hops, this batch of Havel displays a bright, spicy hop aroma, a full malt body, and a very pronounced, yet oddly refreshing bitterness. It’s that last factor, the pointed, prickly bitterness that both refreshes and leaves one wanting another sip. Despite their reputation for being wonderfully easy drinking beers (which they are!) it’s often forgotten just how hoppy and bitter real Czech Pilsner often is. This batch of “Havel Forever” is our best attempt yet to capture that delicate balance.
As you might have guessed, “Havel Forever” is back on tap at the cafe and available in bottles while it lasts. But wait: there’s more! When you buy a bottle or four pack to-go you’ll get one of our hopeful low-key-philosophical-propaganda stickers featuring Václav Havel’s mugshot from his arrest in 1979 and a reminder, that even in these dark and deeply indecent times, one must strive to “live in truth.”
