Last year I cooked for 1500 people at the CVA grand opening of their new supply hub in Cortland. Was able to do all that by myself with a little planning. I decided to take on a bigger challenge, now I’m cooking for 4000 people over a three day state wrestling event in Topeka! Trying it again by myself. Normally this huge double smoker is used for turkey legs but each smoker holds 48 pork butts. Should be fun! Decided to make all of the sides fresh at the location instead of trying to transport everything.

Love the weather! Wrestling season is in full gear! Excited when a large wrestling tournament asks for me to provide food for their event! 40 pork butts later, 900-1000 people will get some awesome food! Thanks for the opportunity MAC Wrestling Club! The best is yet to come when I get to cook for over 4000 people in March at the State Wrestling Tournament! Good times!

Thanks to everyone reaching out for Holiday Smoked Meat. Unfortunately, with 3 big wrestling tournaments on the holiday weekends I will be unable to provide this service this year. I believe Big T’s is still taking orders! Enjoy the Holidays!

We always love when people come back again and again to our trailer. Sometimes those people are super entertaining and make us super happy! Majour not only is one of our biggest rib fans in independence, Kansas, he is much like Terry Peterson, he is one of our best marketing tools! He goes around the street and bars bragging about our ribs to anyone he comes across, we have gotten several people that come up explaining he said they had to try our ribs. We hooked him up with an extra couple racks during our stay there, and we hope to see him next year, along with the countless others that became hooked on our ribs and pudding this year!

** ALL GONE** FREE MILK! I purchased over 50 gallons of milk for the Newton event that involve me making a couple thousand puddings. We are left with 12 gallons. I don’t wanna freeze the milk because it does change the flavor a little bit so I figured I would offer it up to those that would like to Help out with the crushing price of milk in today’s economy. Lol. Please only reach out if you would like a gallon, 1 gallon per family and I will deliver it in town (Beloit) if needed as well.

I have wrestling practice until about 7 PM tonight, but I have about an hour window where I can be at my restaurant or deliver shortly after the first 12 people that comment below.

Taste of Newton - Tried something new yesterday! I received late notice that I was accepted as a vendor for the coveted “Taste Of Newton“ event. This event is nothing short of spec spectacular. Only 4 hours long, the street is filled with a sea of people much like crowds in Mardi Gras. When the action starts, it does not stop until the very end.

Because I was able to get in due to someone leaving the event, there was not room for my large trailer so I decided to come out guns blazing with my pudding lineup. Because it was on a Thursday it was very difficult for me to get my usual staff , so I made a call to the Wichita area for one of the most awesome families I know in the wrestling world… The Eason’s! I only got halfway through questioning David Eason and he already agreed to come and help with the event, not just him, but his entire family came out and absolutely rocked it! We were able to put out close to 2500 puddings and it was absolutely a blast!

My son Denton and new Texas Red’s Superstar, Nicole also helped with the fun! Now that we have got in the door, we are hoping to break out the food trailer next year! This community is very supportive, and it was an honor to share my grandmother‘s pudding with those who attended!

“Pinning the Pins” special event! Honored to be asked to sponsor the food at the USA Wrestling Kansas inaugural golf fundraiser! Had a blast getting ready for this and good to see a lot of of our fellow coaches and folks connected to our programs out there! Even had a Texas Reds team competing today.

Praisefest-2025! Best year ever with weather! Third or fourth year doing this event, always a blast, and could not be surrounded by more generous, kindhearted people! This event is very unique, you arrive around 9–10 a.m. to prepare serving food by 1:00 PM. By 5:00 PM you may be have served five or six people. The first year I came here I got very nervous but as soon as people start arriving for the concert, this event rivals Belleville or Wichita River Fest for lines stretching more than 100 people deep. No one complains, everyone is super supportive and man do they like nachos! Lol ribs of course are always a big hit and this is the first year. I came all guns, blazing with five different types of pudding. Happy to be here with the entire family and look forward to next year!
