Each wheel of Invierno (Winter Cheese) comes with its own batch mark. Many artisanal Vermont cheesemakers mark each cheese wheel individually to track production dates, milk sources, and affinage time for quality assurance. To a cheese enthusiast, though, the batch mark is a subtle sign of small-batch, hand-crafted cheese. 🧀💛
