How to make Haitian Chicken

Something that has always been important to me is preserving my Haitian culture, particularly the food. On my to do list since I was 12 was learning how to make and perfect every Haitian dish I could. Some I learned standing by my grandma in the kitchen and others I learned how to make the trial and error. While I don’t cook Haitian food all the time, when I do it’s magical. Kompas music and the aroma of fresh spices fill the house. My favorite part, my 2nd generation Haitian American girls and my American husband love it as much as I do.

Yes, you can make some good Caribbean red beans and rice on a weeknight.

I used to reserve my Haitian Red Beans and Rice (Duri Kole ak pois) for the weekends because it took an hour and half to boil those beans. That is until my friend put me on to using canned beans for this.

Now I make this almost every week@and the beauty of it is that I can use brown rice. It’s so well seasoned, even people who turn their nose up at brown rice love this.

When you hear a Nor’Easter is on the way you prepare by staying in and making a Sunday dinner that takes some time but is so worth it. Coconut Curry lamb.

For the absolute best curry lamb, make sure you are using the right cut of meat. Lamb shoulder and lamb shanks are fattier and become really tender once cooked 🥰

To rinse or not rinse rice????

That is the question. There are pros and cons to both methods. Rinsing takes away debris from manufacturing and also removes starch (leaving you with a nice fluffier rice). However, it also takes away B vitamins and minerals that were added to the rice during processing.

Either way, the choices is yours. I choose to rinse knowing I will get my vitamins and minerals from other sources. 🥰

Not saying goodbye to summer just yet- grilled peaches. 🍑

I grew up loving syrupy sweet canned peaches….then I grew up and upgraded to the real thing. Grilled peaches are the simplest dessert and they are letting me hold on to summer just a little longer 🥰The heat of the grill caramelizes the natural sugars in the peaches, enhancing their sweetness and creating a smoky flavor. Top with sweetened Greek Yogurt or Ice cream.

Vacations are priceless…. especially when you take time to make something together. This morning it was all hands on deck. I used the art of substitution in cooking to show them you can always make something with nothing. We didn’t have out typical wheat flour, we used cake flour (because that little box was easier to pack), didn’t want to use all our butter for the waffles (used olive oil), didn’t have heavy cream to make whipped cream (we substituted for greek yogurt with honey and vanilla). The girls measured, sifted mixed, and took turns washing dishes. Now it’s time for a nap.

Had a great time teaching the kids at Dr. Leroy McCloud Elementary School today about healthy snacking. The main take away was that life is about balance and controlling what you can. No one expects you to eat celery sticks all the time but try new things and find ways to make them taste better! We used Greek Yogurt to make a Ranch dip (to munch with raw veggies) and then Greek Yogurt to make a naturally sweet dip for their fruit. They learned about the importance of protein, complex carbs and fiber in the most fun and simplified way.

So much fun!

Monday lentils wrap- lentils are my go to for meatless dishes- but how do you know which ones to use? I have totally slipped up thinking all lentils were the same……. Wrong!For this meatless Monday I used red lentils for an easy wrap!Red lentils have a sweet nutty flavor and cook quickly about 15-20 mins. They don’t hold their shape and are best for purées, curries and soups. I’m using these Brown lentils are the most common and have a mild, earthy taste - they take about 25-30 mins to cook. They hold they sharp and are great for things like veggie burgers, stews and salads. Green lentils take the longest to cook about 30-40 mins. They have a peppery robust flavor, hold their shape and are great for salads and side dishes
