Great review in the The Wormwood Society - Absinthe Education Organization by Matthew Harding!

I want to preface my tasting notes by mentioning that I've had 1913 Pernod Fils from the Palazzo hotel cache, two liters of 1960s Pernod Fils Tarragona, and also did a side by side comparison of '60s Tarragona and this absinthe. My only regret is I've been sitting on this absinthe for years, but every time I thought about buying it something new caught my eye. I'm so happy to have finally added this to my collection. It's a great daily drinker and will help me hold onto my Tarragona a while longer because I can drink this in place of it.
Absinthia Verte Notes:
Aroma:
Before water - Earthy wormwood, fruity, a very small amount of alcohol makes it through, but not off putting
After water - Fruity, powdered sugary fennel, floral earthy, reminiscent of Pernod Fils Tarragona
Appearance:
Before water - Goldenrod citrine. I have the verte but mine is already feuille morte, which doesn't really bother me, but it would probably be peridot if the chlorophyll didn't already decay
After water - Creamy citrine with some green edges awakened by the water
Louche:
Great oil trails bellow up into a beautiful golden opaline cloud
Taste:
Pernod Fils vibes, this reminds me a lot of the 1913 Palazzo cache Pernod Fils I tasted. There are some powdered sugar fennel notes, and the anise is fruity sweet while also sharp and mildly tingly. Creamy fennel coats the mouth nicely and reminds me of Turkish delights. Sweet, spicy, some funky fennel notes. Vanilla ice cream. For the amount of times I've used the word "sweet", it's not cloying or off putting at all, it's very drinkable and savory. The coriander does a good job of injecting enough spice to keep the sweet notes from taking over.
Finish:
Woodsy, a little leather, then back with the powdered sugar, then flaky pastry. I wish it lasted longer, but it does make me want more.
Overall:
This absinthe is very simple in terms of ingredients, but very well executed. Great balance, yet easy to distinguish each ingredient, constantly draws you in for another sip, and gives off confectionery Pernod Fils vibes.
