Last week saw a lot of chicken leave the Dubs freezers and end up in homes across Franklin County!

For those of you who missed out there's still some available but it's limited. Plenty of chicken wings, organ meat, and necks or backs for stock! There are just a few packs remaining of thighs, leg quarters, and halved chickens.

With Dubs coming to an end it's time to fill your freezer and empty mine!

On Fridays until my freezers are empty I'll be making chicken deliveries around Franklin County - St A in the morning, Montgomery in the evening, other towns in-between.

There's plenty of whole chicken, drumsticks, wings, livers, necks, backs, and skin to go around. Boneless skinless breasts, thighs, halves, and hearts are limited. Unfortunately tenders are sold out for good.

Raising turkeys was my favorite part of Dubs over the past few years. Pictured is the only 2025 Dubs turkey - a drawing by my amazing helper Apple .

Apple helped on the farm for the past few years tending to the garden, doing chicken chores, jumping in to learn all about processing, and reminding me to stay hydrated/nourished.

Before heading back to college for her junior year of art school Apple drew me this beautiful turkey. She worked in some really meaningful details and even snuck in a few Easter eggs. Iykyk.

There was a lot of stress and anxiety with Dubs but memories like this make it worth it.

This chicken isn't the prettiest but it's very special nonetheless.

On October 7th this chicken was the last one through my little processing line. That batch of chickens was the last of the year and this year is the end for Dubs.

It's been a wild ride for four years but it's time for me to move on to new adventures in life. I've met tons of friends along the way and learned a ton about the meat industry and myself. What's next is still up in the air but it's time for a major change of pace.

There are still whole chickens, some parts, and lots of organ meat and backs available so shoot a message if you're interested in sticking up one last time.

Parting down 10 chickens in 18 seconds - in real life probably about 30 minutes.

Each week this summer I've been breaking down about 60 chickens into boneless skinless breasts, tenders, thighs, drumsticks, wings, backs, and skin. It's definitely caused my carpel tunnel to flare but I enjoy the challenge of cutting each carcass better than the last.

In this clip I break down 5 chickens, scrape my cutting board, rinse my hands, break down 5 more, place the breasts/tenders/wings/skin into the appropriate bins and then at the end I break down the legs into thighs and drums.

What's your favorite chicken cut? I'm a weirdo and mine is the wing flat!

It's still August but it's beginning to feel like autumn. That means it's almost soup season!

Do you love to make homemade chicken stock? We've got you covered with packs of chicken backs so you can make plenty of stock to fill your pantry or freezer!

Some folks even feed backs to the dogs - we recommend you consult with your veterinarian to make sure Fido has a well balanced diet!😉

It's been a crazy summer slinging chickens! I've barely been able to keep up with orders from Hudak, Rail City, and Wood Meadow. Plus I've busy at the Montgomery Farmers Market.

As fall sets in and you're inside cooking more, Dubs is here to stock your freezer with pasture raised chicken!

Whole, boneless skinless breasts, tenders, thighs, drumsticks, wings, leg quarters, halves, livers, hearts, necks, backs, and even skin to make schmaltz!

If you'd like to stock up your freezer there's a 10% discount if you purchase 10 or more packages which you can mix and match!

Fridays I can deliver in St Albans, Tuesday evening I can meet folks in Jeffersonville, or you can pickup at the Montgomery Farmers Market on Saturdays. Need delivery somewhere else in Franklin County? Reach out and I'll do my best to make it happen!?

Today was such an exciting day!!! I got to deliver my first two wholesale orders to and !!!

Both shops have whole chickens as well as cuts available.

Next Thursday we'll stock up Wood Meadow Market in Enosburg too!

I'm not crying you're crying. JK I was totally crying happy tears in these pictures.

If you've ever talked to me, Julie, about poultry processing you've heard about my goal to come under inspection. Becoming state (or USDA) inspected means that the producers can sell their product in stores, restaurants, and institutions such as schools. Each time an inspected facility slaughters there is an inspector present and there is a ton of documentation and regular pathogen testing.

Prior to today Dubs had processed poultry under exemption which means that we followed best practices on boy scouts honor.

However, today Apple, Ricky, and I processed my first batch of chickens under inspection. Pictured is inspector Aaron looking over my very first inspected chicken while I asked a million questions.

Tomorrow I'll part down chickens and will offer boneless breasts, thighs, drums, wings, etc.

The first retail delivery is headed to in Saint Albans on Friday. I'm also talking to additional retailers in Jeffersonville and St Albans. Plus Ricky with Groenfell will have Dubs at Northwest Farmers market on Saturdays!

I can confirm Julie Boisvert and the whole VT Meat Inspection team are amazing. Greg in compliance worked with me on documentation for 5 hours in anticipation for big things at Dubs next Tuesday!!!!!!!

The whole meat inspection team cares so much about supporting farmers.

Trying to not jinx myself by sharing too much of the excitement but big things are happening next week!

Tomorrow is the first Montgomery Farmers Market. Come by rain or shine for chicken!!!
