We love to find any way to add vegetables to our plates, and this zucchini sandwich recipe is a perfect way to do that!

Ingredients:
- 1 zucchini, thinly peeled
- ⅓ cup onion, sliced
- 2 slices of bread, toasted
- mozzarella cheese, fresh or shredded
- jalapeno
- tomato
- arugula
- balsamic glaze
- olive oil
- salt
- pepper

Instructions:

1. Prep zucchini and onion. For the zucchini, you can peel into thin pieces with a regular potato peeler. Stop at the seeded part since it will be watery when cooked.

2. Cook zucchini and onion in a pan with olive oil and salt over medium heat until soft. It will reduce in size. Partway through cooking, toast bread in a toaster oven with a drizzle of olive oil and mozzarella on one side.

3. Layer your sandwich: Add cooked zucchini and onions over mozzarella. Add another sprinkle of salt if desired, and black pepper. Next, add desired amount of jalapeno slices, tomato, and balsamic. Lastly, add arugula.

4. Enjoy!

We have a delicious blueberry salad dressing recipe for you! What better way to top a salad than with one of our favorite summer fruits as the feature! 🤩💙

Ingredients:
- 1 cup blueberries
- ½ of a lemon, juiced
- 1 tbsp red wine vinegar
- ½ cup olive oil
- ½ tsp honey
- 1 tsp pure maple syrup
- 2 tbsp water
- ½ tsp salt
- 3 mint leaves, chopped
- ¼ tsp red pepper flakes

Instructions:
1. In a small pot, cook blueberries with lemon juice over medium-low heat. Once softened, mash with a fork until you have a liquid consistency. Allow to simmer for another few minutes.

2. Add all of your ingredients into an 8oz jar. Make sure blueberries have cooled before adding to the jar. Shake vigorously to combine all of the ingredients.

3. Add to a salad and enjoy!

Summer squash is in the stand, and we have a delicious recipe to inspire your summer cooking! ☀️🍽️

Ingredients:
- pasta, measured out to two portions
- 1 summer squash, thinly sliced
- about ⅓ cup white onion, sliced
- 1 clove garlic, sliced
- 2 small tomatoes, or 1 medium tomato (can also use cherry tomatoes), cut into large pieces
- 1 large handful of spinach
- a few leaves of basil, sliced
- parmesan cheese
- ¼ tsp red pepper flakes
- salt
- olive oil

Instructions:
1. Begin by boiling a pot of water. While you wait for the boil, prep all your vegetable ingredients. Add pasta to water when ready.

2. Heat a pan on the stove with a few tablespoons of olive oil on medium heat. Once heated, add onions and summer squash to the pan with a sprinkle of salt. Cook for about 5 minutes.

3. Add garlic to the pan and cook until fragrant. Then add tomatoes. Cook until soft and easy to break up.

4. Finally, add in spinach, basil, and red pepper flakes. Once the spinach is cooked, add your cooked pasta to the pan. Add parmesan to your liking, along with additional salt if preferred.

5. Serve and enjoy!
