Another spring recipe! This time, a delicious roasted asparagus pasta dish!
Ingredients:
- 1 box of orzo pasta
- 1 bunch of asparagus
- 2 cloves garlic, finely chopped
- ½ cup green olives, finely chopped
- ½ cup artichoke hearts, roughly chopped
- ½ cup white cooking wine
- ½ cup shredded parmesan cheese
- 1 ½ lemons, juiced
- small handful of basil, chopped
- olive oil
- ½ tsp red pepper flakes (more or less based on preference)
- salt
- pepper
Instructions:
1. Begin by preparing your asparagus. Preheat your oven to 400 and roast asparagus on a baking sheet with a drizzle of olive oil and sprinkle of salt and pepper.
2. Begin cooking your orzo to the box directions.
3. In a saucepan, sautee garlic, olives, artichoke hearts, and red pepper flakes in oil. Once fragrant, add in cooking wine and parmesan. Mix well.
4. Turn the heat to low and add the orzo to the pan. Next add in lemon juice, salt and pepper to taste, and basil.
5. Plate orzo with roasted asparagus set on top. You can add additional fresh basil and parmesan on top if you choose! Enjoy!
***Note:
This dish can also be served cold as a pasta salad! Simply chop your asparagus into smaller pieces and satuee them in your pan ahead of the other veggies.
