Spring is a very busy time in the sugarhouse. As syrup is made, it is put in large containers for storage. Later, it is reheated in a smaller cooker and bottled into smaller jugs. These last two days we canned 80 gallons into 1/2 pints, pints, quarts, half gallons, and the bulk of it into gallon jugs for our restaurant customers.
