In regards to an earlier post about water glassing eggs: Yes, it works! We do it every year. We use 3 gallon buckets. Just mix up 1 quart distilled water and 1 tbsp pickling lime (that’s the ratio, you’ll need more obviously), and start adding eggs. They preserve surprisingly well and there is no change to flavor, although the white does get thinner/runnier… that being said they cook up just like normal. I’ve eaten eggs in March that were laid in July, and they’re just as good as the day they were laid.
Some helpful hints:
-They need to be fresh, unwashed (but not dirty with droppings and such stuck to them). If you wash the bloom off, the pickling lime and water will pe*****te the egg and ruin it. The bloom protects the egg and the pickling lime sort of encapsulates the bloom, effectively sealing it.
-It helps to collect your eggs as quickly as possible so other birds don’t make a mess on them (chickens will p**p on eggs).
-A plastic bucket (we like 3 gallon) will maximize your storage space and you can keep adding eggs every day until full, and will allow you to store more eggs for cheaper (glass jars only hold maybe a dozen or so in my experience). These buckets will hold hundreds, and they don’t take up much space.
When we start: Starting usually in mid-July, we start preserving eggs for the winter. We have about 18 or so chickens and get anywhere between 10-15 eggs a day. We’ll sort them by clean vs dirty, preserve the clean ones and the dirty ones go on the counter to be eaten as normal. The clean ones get added every day until the bucket is full, then we seal it and start the next one. We will usually preserve 2-3 buckets worth from summer to fall and that lasts us all through fall and winter, and into spring when laying picks up again.
