Bittersweet Maple

Bittersweet Maple Bittersweet Maple is a family run sugar house in the heart of the Helderberg Mountains. The seed for Bittersweet Maple was planted in 2010.

It all started with a lost dog that wandered over the mountain to a neighbors sugarhouse. The smell of boiling sap brought back memories of childhood days spent in our families’ sugarhouses. That also happens to be the year our first daughter was born. Our children and our desire to feed them the best quality, purest ingredients possible is one of our driving influences. Our focus is on creating t

he highest quality syrup possible by using the most modern equipment available throughout processing, filtering and bottling while still honoring age old traditions such as boiling over wood and having a few buckets for our girls to peek into. Grab a glass bottle of our syrup and hold it up to the light, our quality is as clear as our syrup!

Now that we've finished the harvest season we're working hard to make amazing products available. Today we're at Wayward Lane Brewing for their first Market in the Meadow of the season. This market has amazing vendors and runs the 1st and third Sundays May through October. If you'd rather catch us Saturdays we'll at Cricket Ridge Storage & Events the same weekends through September. Better yet, make the trip to our new store any time you like. Even outside of out listed hours we welcome guests. Just shoot a text to be sure we're home, and we're almost always home.

2026 season totals are in!

We are very happy with this year's crop! The season ended for us on 4/1 which is a few days earlier than "normal". We had only made about 10% of our crop by March 8th, we are grateful to have had a successful short season. This season will go down in the books as the "midnight run" with some huge night time sap runs. I thank my wife for handling all those 2AM tank alarms and making sure we didn't overflow.

It is always "Bittersweet" when the buzz of the sugarhouse goes silent. We are already looking forward to 2027. Thanks for following along!

A quick thanks to everyone who made it out for maple weekends this year. We are always happy share our operation. We take great pride in what we have accomplished in the past decade and a half.

Some new things are in the pipe line for the upcoming year. Hope to see you soon and stay tuned.

Right now, back to work! 2500 gallons of sap went through the reverse osmosis this morning and the sap is running off the hill at 150 gph!!

It sure has been a busy week keeping up with sap! It looks to be a beatiful day and steam will be rising around 10 AM. Yesterday's 3 hour freeze up led to a surprise sap run that lasted into last night.

My wife has some fantastic maple apple coffee cake, short bread cookies and my favorite, maple monkey bread with maple cream drizzle!

Maple weekend is here! We're open 10am to 4pm tommorow and Sunday. The sap is running great and we expect full tanks by morning. Come see our wood fired evaporator in action!🍁

We also have free samples of all of the maple products we make available in our new store. Our small scale sawmill and logging equipment on display along with maple tools, tubing and tapping displays. We hope to see you!
