V Empanadas Traditional style hand made empanadas with an Ecuadorian twist. Made with only fresh ingredients. Savory beef, chicken, vegetarian and organic.

Born and raised in Quito, Ecuador, Miss V as known by most, moved to the USA in 1990 with her family. After graduating university in 1999 and working in corporate America for over 10 years, Veronica relocated to Charlotte, NC with her now husband Brendan. Here is where V Empanadas were born. These delicious delicacies became her staple to welcome guests over her home as she acclimated herself to b

eing a newcomer, a mother and wife living in the South. In 2011 Veronica and her family moved back North and settled in Berwyn, PA. These empanadas have become her love staple and by popular demand and with great excitement Miss V is ready to share her love and passion to making others happy and painting smiles all around.

When I look back and think of this special friendship/sisterhood my heart truly skips a few beats. Anita has been my childhood friend since we were 9 years old, fourth grade to be exact. When I moved away from Ecuador at 14, separating from my best friend was one of the hardest things I had to do. The universe had a plan and I am so glad and grateful for our friendship has stood the test of distance and time. ✨❤️
This visit, she finally made it to the market to see what has been keeping me busy for the past four years.
Her family is my family and I couldn’t be happier to have them here with me.

Our first Christmas Market at !! It truly was a wonderland! The lights, the music and everyone ready for the last day of school before winter break.

Our empanadas were a favorite and we ran out within the hour! Always fun to see the happy faces of excitement and joy all around!

We heard your requests, comments, suggestions and are here to deliver!

Starting this Saturday 11/22 our food truck has partnered up with . We will be onsite every Saturday at their brand new parking facility. We are excited for this opportunity and can’t wait to bring you all our selection of delicious empanadas.

Just for this location we have made a new bacon, egg and cheese empanada! We hope it’s a HIT!

Back in the early days of ideating and dreaming about our food truck, was the Dream! This place is home, it’s our backyard, our playground and our community. I would always think of how amazing it would be to be a part of welcome week, homecoming, food truck Fridays and more.
Two years ago we even decked our entire booth at the in support of making it to the final four. (Last photo)
Yesterday the dream came true! Our Food truck was part of homecoming! It was a beautiful day and the brought their best energy to celebrate.

Thank you for sharing our BIG news in your latest edition.
We are so excited to let everyone in our community know that we are growing and expanding our reach. A brand new Food Truck is no joke! It’s a huge investment, it makes a statement and it truly is the easiest and in our case most elevated and delicious way to entertain with Latin flavors. Oh and don’t forget that Ecuadorian Twist! 🇪🇨
I would have never guessed this journey would unfold this way but I am grateful for it all - the good, the bad and the ugly.
Being female, a foreigner with a slight accent and a small business owner in the food industry is NOT for the faint of heart.
Thank you for your support since the very beginning! To think my yoga student Caroline years later would become a friend and my small business cheerleader would have only been a dream.

This past weekend, the V Empanadas Food Truck hit the road with the most glorious PA debut. She got busy out of the gate!

From the charming .patina_willowbrookfarm Barn Sale in Malvern, to a joy-filled 40th birthday celebration in stunning Gladwyne and a grand finale at the vibrant 33rd Annual Radnor Fall Festival in Wayne — she truly went out with a BANG!

None of this would’ve been possible without my village — the constants in my life who believe in me, lift me up, and have been by my side since day one. You know who you are and know I’m forever grateful.

Cheers to whatever the future holds! I have a great feeling it will continue to be flavorful and bright! ✨

Running a family business is no small task — but one of the greatest rewards has been doing it alongside my children.

This weekend, Sebastian — whom many of you have met at the market — is heading off to begin his first year of college. Watching him grow and develop such an incredible work ethic has truly meant the world to me. I’m beyond proud of the young man he’s become and excited for all that lies ahead in this next chapter.

As we say goodbye (for now) to Sebastian, I’m also incredibly proud to officially welcome my younger son, Cayetano, to the market. I know he will carry forward the same values of hard work, kindness, and community that have always been at the heart of our business.

Thank you all for supporting our family — and our food — through every season of change.

What a week, what a day!!
I had been waiting for this day to come for soooo long. This side of my family is connected in so many beautiful ways. ❤️
When Brendan and I got married in Ecuador almost 2️⃣0️⃣ years ago, we didn’t just throw a wedding—we kickstarted a family merger.
Exhibit A: we introduced my cousin Cristina to Brendan’s one and only (and most favorite) brother, Sean. Spoiler alert: they got married. You’re welcome, guys.

Today marks the third anniversary of the first official day we opened to the public at the . I’ll never forget that 2/26/2022. The nerves, the anticipation and the excitement to show up with my empanadas and take a chance. Nothing ventured, nothing gained - Selling out by 11am that first day was definitely a good sign!
As we continue to grow our brand we are so excited to announce to you our food truck rolling out summer of 2025!

A special thanks to Sandy for her continued help and support. Her vision and creativity have truly elevated our brand and we can’t wait to see what the future holds!

This popped up on my personal Facebook feed this past week. I have been reflecting on it and it’s hard to believe that 1️⃣4️⃣ years ago while living in Huntersville, NC I had this vision. ✨❤️

Brick by brick it continues to teach me more than I thought I was ready to learn. As a yogi I try to practice “non attachment” - for now all I can do is put one foot in front of the other.

Grateful for each and every one of you, for your continued support, love and encouragement.

Let’s see what the future hold for our small sweet brand.
