One great thing about having a freeze dryer is that I can have forest raised eggs when they stop laying for the season. I probably have a lot more than we will use, but this is what is on the agenda this morning!

Forest Raised Pork:

Commercial pork is often injected with brine or water before being packaged for sale to the consumer. Our pork is NOT injected brine or water. Also, our pork has No Nitrites or Nitrates.

Naked "Bacon" : uncured sliced pork belly (pick up a sample of hickory, apple or cherry smoked salt to add when cooking and finish it off with some maple or brown sugar before serving).
