14 hours total smoking, cooking and resting started at 1 AM and all done and ready to serve at 3 PM

Started smoking a Pork Butt at 1 AM this morning.

Spent a couple hours smoking over Apple Wood at around 175-200°

After it got a good bark all around we cranked the heat up to 250° for 3 more hours, it's not wrapped in butcher paper coming up to temp while the chicken breasts smoke before it takes a nice rest until it's time to eat.

We had my mom over last night and grilled some Pork Steaks, Chicken breasts, cheese stuffed hot dogs, twice baked potatoes and corn.

Probably the first time in a while Bratwurst weren't on the menu!

Spent the day helping my little brother clean out a property in Belleville today now we are back at my house and I'm cooking for everybody.

After 3 years, this is our first real post—and we’re starting with a classic showdown:
Pulled Pork Sandwich vs Pork Steak.

Whichever one gets the most love here will be our first official dinner plate, and we’ll be rolling out more frequent dinner plates after that.

We’re still working out the logistics—are you interested in delivery (within 5-10 miles of Bethalto ), porch pickup, or both?
