We had the absolute privilege of working with students like Sarah Gao ’26 from Lehigh University’s CHE 370: The Engineering of Brewing, Winemaking, and Distilling — an experiential elective offered through the Department of Chemical and Biomolecular Engineering (ChBE) that explores the core chemical engineering principles behind alcohol production while giving students hands-on brewing experience. 🍎

Sarah wanted to create something special for her and her friend Maddy to enjoy together during their final semesters at Lehigh, especially since Maddy can’t drink beer. After visiting the taproom, touring the cidery, and learning from Andrew & Brian about the cider-making process, Sarah and her classmates developed a lychee-fruited cider profile. Sarah named the cider “Penelope,” and we all got to share a can together on Sarah and Maddy’s last night in . ❤️

Throughout the course, students also collaborated with Sam from Bonn Place Brewing and the Lehigh University pub on campus. Congrats, Sarah! We’re honored to have been a small part of your journey.
