Makiri knives have a strong maritime history, particularly with the Ainu fishermen of the Noto Peninsula, Northern Ishikawa Prefecture. The seafaring men counted on this austere-looking knife for a number of tasks while on boat: rope cutting, cutting nets to proper sizes, and, of course, butchering fish. However, it played a more central role in day-to-day life. It was, in essence, their EDC. Whatever needed cutting was dealt with using a makiri.

The Gesshin Uraku series has been a stalwart for hard working professionals and home cooks looking for high performance knives that don’t compromise on durability. This addition brings an updated aesthetic with Damascus cladding around Ginsanko steel. They have a very thin grind for excellent cutting performance, and come with octagonal handles and matching saya.

For this special version, we acid etched the blade to enhance the contrast in the Damascus pattern and highlight the character of the steel. The handle was also roasted to improve its stability and durability in demanding kitchen environments.

After years of our old website, we’re finally about to launch a new and updated website. Our hope is that the new site makes it easier to navigate and shop on our site. You will now be able to filter in-stock and out-of-stock items, view recently restocked items, filter by size, price, and a number of other filters, select add-ons like laser engraving more easily (with text and font options more easily visible), and much more. Once the new site launches, we’ll be working on some last minute finishing touches that can only be done once the site is live. For the person interested in their first Japanese knife, the Shiun series combines excellent performance with a unique look. These knives feature a VG10 stainless steel core hardened to approximately 60 HRC and stainless hammered cladding. They offer good edge retention, are easy to maintain, and are relatively easy to sharpen.
