Catskill Fungi

Catskill Fungi Catskill fungi is about helping people and improving the planet through our work with mushrooms. We m Catskill Fungi has a foundation of permaculture principles.

Here at Catskill Fungi, we produce high quality triple-extracted mushroom health tinctures from fungi that have wild-crafted or organically grown on our family farm. Our consulting branch incorporates edible and medicinal mushroom cultivation into residential landscape design. We enjoy sharing our love of mushrooms on our guided mushroom walks, through cultivation workshops, and through our mushro

om inspired art. This means the core of our business is about helping people and improving the planet through our work with mushrooms. We practice sustainable harvesting, leave-no-trace principles, and compassion for the environment. We aim to empower people to grow edible mushrooms as a fun source of fresh food, to heal themselves through utilizing health properties of fungi, and to explore the historical uses and present day innovations of this exceptional kingdom.

Have you been noticing spring edibles? Maybe garlic mustard, ramps, or even morels if you’ve been lucky? Join us in Pine Hill this Saturday evening to forage for spring edibles at the Catskill Fungi Mural and then head to renowned restaurant Peekamoose for a foraged feast!

While at the mural we will walk the property to learn about different plants and fungi we find and spend time harvesting knotweed, dandelion, and possibly some other wild foods for dinner. As we forage, we will talk about the culinary and medicinal properties of each plant and mushroom, as well as cooking and preservation techniques. We may travel down the road to find some patches of other wild edibles to forage and collect.

We will arrive at the Peekamoose restaurant (3/4 mile down the road) where we will be greeted with a foraged cocktail/mocktail and gather in the dining room.  Owner Marybeth Mills will introduce this award-winning restaurant as well as the delicious three-course foraged dishes prepared by her amazing chefs, before we say “cheers!” and dine on the delicious plants and fungi similar to what we harvested.

The ticket includes a foraging walk, welcome cocktail, and three-course dinner.

We are excited to announce the New York Botanical Garden Mushroom Identification Flashcards!

This compact, colorful, and informative flashcard deck makes a great companion for newly minted mushroom lovers and veteran foragers alike. Catskill Fungi Founder John Michelotti worked with Penguin Random House to select these 100 common mushrooms, which were matched with the illustrated plates in the renowned archives of the New York Botanical Garden . John also edited the selected text chosen from the Audubon Society Field Guide to North American Mushrooms, originally written by John’s mentor, the inimitable Gary Lincoff.

Can you tell a Morel from an Inky Cap, or a Puffball from a Lion’s Mane? If you, like millions of others, are mushroom-curious, these flashcards will be your perfect knowledge builder and outdoor companion. This hand-selected collection of cards also celebrates the artistic detail of the original NYBG illustrated plates. On each card you’ll find:

• a detailed illustration of a common North American mushroom
• key identifiers, such as the mushroom’s gills, spores, stipe, and cap
• the mushroom’s popular and Latin name
• information on size, color, spore print, season, habitat, and range drawn from The National Audubon Society Field Guide to North American Mushrooms by Gary Lincoff and the recently published National Audubon Society Mushrooms of North America.

Catskill Fungi is selling this deck at Farmers Markets and events, so be sure to come on a walk or visit us at markets this year!

Discover how fungi are being used to degrade pollutants and clean up the environment by filtering water, removing heavy metals from soil, remediating microbes, and breaking down plastics. Mycologist John Michelotti will discuss current mycoremediation efforts worldwide—including his own work in Ecuador. Pet owners will even learn to build a remediation bucket to treat bacteria in used kitty litter and other pet waste.

As seasons change, mushrooms are a great way to help nourish our bodies. Catskill Fungi and San Mul 산물 are partnering to host a Harvest Dinner where participants will learn to cook a mushroom-based feast and then enjoy the preparations around the table together. While we cook, we will learn about the ways fungi and fermented foods are medicinal and nutritional for our bodies, as well as tips and tricks for making your mushrooms taste amazing!

What to expect:
We will prepare a wild mushroom dinner as we learn about the medicinal and nutritional aspects of fungi and fermented foods. We will focus on a few local wild mushrooms and discuss everything from how to identify them to their medicinal properties and how to prepare them at home, so you can be ready to forage them come next mushroom season. Once dinner is prepared, we will feast around the table together!

About your hosts:
San Mul 산물 (meaning Mountain Water) is the new storefront of East Branch Farms/Kimchi Harvest. Here, Madalyn Warren makes seasonal kimchi and banchans in the kitchen and retails fermented products from the fields and forests of her biodynamic farm.

Catskill Fungi empowers people with fungi through outdoor educational classes, cultivation courses, mushroom art, and mushroom health extracts. Founder John Michelotti and workshop hosts Gabriela D’Elia and Erwin Karl look forward to sharing fungal knowledge and a delicious, healthy meal with you.

Catskill Fungi Mushroom Extracts make great, local gifts for your friends and family! Why?

👉 Catskill Fungi is a small, family company created by John Michelotti in 2015, and is based in Big Indian, NY. Our mission is to inspire connection with fungi.

👉 Catskill Fungi is founded in permaculture principles and sustainable practices like consciously foraging our own wild mushrooms in pristine habitats of the Catskill Mountains. And for Lion’s Mane and Cordyceps? These two are the only mushrooms we work with that don’t grow as abundantly in the Catskills to sustainably make medicine with, so we source these two mushrooms from our friends at local, sustainable mushroom farms. You’ll never catch us harvesting more than 2/3 of a wild mushroom fruiting. We always leave mushrooms behind to support ecological balance.

👉 In addition to using top quality mushrooms for our extracts, we also use top shelf quality ingredients like Catskill Mountain spring water and organic, non-GMO cane alcohol.

👉 On top of hand-making every batch of extracts, John and the Catskill Fungi team spend the seasons educating others about fungi - who they are, what they do, and how to live in symbiosis with them for healthier and happier homes and communities.

👉 The “shroom boom” is happening! More and more people are becoming interested in mushrooms and their medicine. Our extracts are a preventative way to help keep our communities healthy and resilient. And you never know, your uncle Larry or your fifth cousin twice-removed might give ‘em a try!

👉 If extracts aren’t your thing, consider gifting your friends and family a private mushroom walk during the 2026 mushroom season!

📸 Big thanks to for capturing these wonderful photos!
