We are sold out of our extra chickens and beef. We gather 3 dozen eggs a day now so send us a private message if you need farm fresh eggs. Thanks to all of neighbors in the community for supporting our small farm.

It’s that time of year when the chicken tractor is stored away for the winter and there’s one less set of animals to care for … until spring. We have just 20 of these 7+ lb birds left: $16/ bird.
Also, we have one beef left for sale at market price with a butcher date of April 17, 2023. You may buy a half or whole. Contact us today to help fill your freezer.

Out with the cured and in with the fresh.

Should have pulled the onions before this last rain but it is what it is. If they don’t cure well for storage, we will chop and freeze or dehydrate them for the winter.

Happy with the Candy and Patterson onions but do wish the shallots had been much better as they store very well. Looking into what to do next year to improve that.

It has started…

Our gardens were all put in later than usual, but the Lord takes care of us at the right time, all the time.

Early harvest apples, cabbages, broccoli, green beans, peppers, green tomatoes (couldn’t resist the temptation of fried green tomato and bacon sandwiches), cucumbers, and red potatoes were all gathered and made for a delicious supper.

Our girl made green beans, crispy sautéed red potatoes, fried green tomatoes and Hungarian wax peppers (yeah, they were delicious as a panko-crusted addition to the sandwiches), bacon, homemade sandwich bread, and sliced cucumbers. Our plates were filled with foods from our farm which makes a person feel pretty blessed with what the Lord has provided.

If you have ever owned Bantam chickens, you’ve likely had the ultimate brooding hens. These two ladies have worked side by side in hatching our Golden Comet/Leghorn chicks from our other layers. There are two other types of hens in our flock that lay the blue and green eggs that are in this hatching as well.
We’ve added to our flock this way each year and are at point of having this set as extra so we are selling these five as straight run (male and female mixed) for $25 in 3 more weeks. They will be old enough to be on their own by then.

We’ve found a method that has growling at eggshells a thing of the past. 😁

When you lay out hamburger for patties on the campfire and realize there are no buns in the house…

Recipe:
1 T yeast
1 c warm water
2 T honey or brown sugar
1 egg
2 T butter or lard(I used lard)
3.5 c flour
2 t salt
1 beaten egg for brushing on tops just before baking

Let yeast bloom in water and sweetener of choice for about 10 minutes. Add remaining ingredients and knead for about 8 minutes.
Let rise, covered, for about an hour. Make 10 balls from dough and flatten slightly to resemble hamburger buns. Place on greased sheet; let rise for about 30 minutes and brush with beaten egg. Bake at 375° for 20 minutes.

Finally had time to finish up the beef broth. After butchering our latest batch of chickens and getting some mowing and brush hogging done, we brought out the broth from the fridge.
After straining the broth (and giving the dogs a big treat), we placed the cooked broth in the fridge so that the fat would solidify for easy removal. As you can tell, the bone broth congealed, which just shows it has plenty of collagen from the bones.
Once heated, jarred, rims cleaned, flats on, rings finger-tight (be careful not to do more as the newer flats will buckle), and pressure canned at 10 lbs fir 40 minutes, we have a few jars ready for lots of recipes. Beef stroganoff, chuck roast with potatoes and carrots, beef and noodles, homemade hamburger helper, soups…oh my, this is when you want fall to come so comfort foods are what you crave.

Have you seen the price of eggs at your local grocery store? Have you heard that they will likely go to $12 a dozen? Well, we’re not so sure about that one as that seems ridiculous…but we would have said that about gas prices being over $5 a gallon…
We love our local grocery store for its convenience, its wonderful staff, and for the items we simply cannot source from our local farmers. But where we can, we buy from our local producers. We buy where we know it’s homegrown and simply better for us.

Sticking with the theme of cleaning out freezers and stocking the shelves, we’re making beef bone broth this week. The electric roaster is being put to good use as we cook our beef bones with onions, celery, peppercorns, and bay leaves. We add a little apple cider vinegar to help pull out the collagen in the bones to make a richer broth. This will simmer for at least 24 hours before it’s jarred, canned, and put away for later use. 😊

So far so good. The swarm trap was full of drawn out comb and bee larva so we are blessed with a chance of free honey 😉
We’re feeding sugar water for now and will stop that after this week.
