We might have someone already but wouldn't mind having some backup too just in case.

Is anyone here locally in need of chicken for the freezer?

Here is what I'm thinking, we have about 13 roosters left and I'm so over trying to stuff them in our freezers or can them 🤣
I think we have enough chicken for two years... Wish I was joking.

So what we would do is they will be processed in the next couple weeks probably not this weekend but the next one possibly.

What we are asking is this.

You come help process and please don't let them go to waste. The birds will all be from this year of course. And you package them how you want at the end.

Don't be afraid of the pressure cooker.

They really aren't just going to explode on their own for no reason.

Most of the food canners have safety valves.
My All American has the gauge , the small black safety rubber if it gets to high and the weight is also designed to release pressure and heat if it gets too high.

Water bath canning is only safe for foods high in acid. Anything that isn't high in acid needs to be pressure canned because without the pressure the heat can't reach the interior of the food and kill the bacteria that might be there it needs the pressure to push the heat deep enough.

Yes there is rebel canning without using a pressure cooker and for this I say to each their own and do what works for you .

However if You're offering things to others I would label them with the preservation method used so people know what they are getting. Just saying because of many years working in a kitchen in the past and being in insurance it's a good thing to let people know.

You know those memes about growing tomatoes not being worth it because of all the work it takes and yet tomatoes are only so much a pound.

That was clearly not made by gardener. Or someone who preserves their own food.

I panicked and bought a case of tomatoes from a local produce place it was like $28 for 17 lbs which isn't a bad price but gosh it felt spendy and the taste wasn't the same.

There is just nothing compared to a vine ripened tomato. 🍅🍅🍅

And I can't imagine how many cases I would need to make all the spaghetti sauce and salsa we need.

The molting process amazes me. It always has.

Just think of how many feathers that is at once.

Animals and life is just a miracle and the process things go through.
