32 lbs of pulled pork. 2 traditional NC style and 1 Texas style. My own special rub for both.

Breaking these down into 1-1 1/2 pound vacuum bags means I can make it in a larger quantity and have it whenever I want on weeknights or for random occasions.

Charcoal is cool!

Since my wife is out of town I'm going caveman style. Cooked this steak directly on these 1000+ degree coals.

Beautiful sear and ended up a nice medium rare. Paired with some grilled cauliflower because why waste the heat?

Culture clash!

I was craving a home cooked Italian meal. I made my mom's sauce and used her (slightly modified) meatball recipe but instead of cooking them in a pan and the sauce, I smoked them. Deep, rich flavor I remembered from childhood but the added hint of Hickory smoke. I also made some homemade pasta and garlic bread.

All in all a wonderfully nostalgic dinner and a bit of that culture clash coming through.

I have been wanting to make beef ribs for a long time, given it is Memorial day weekend it seemed like the perfect opportunity.

Salt, pepper, garlic, and Hickory smoke gave these ribs a beautiful smoke ring and all the flavor in the world.

Homemade corn bread with Aniheim peppers and collared greens rounded out this meal.

All in all, one of the best BBQ meals I've ever made.
