When the guys started the Sap Shack, they started with all buckets. We collected for 12 hours a day, with groups of 10-20 people helping. We also had a crew at the sap shack who kept cooking throughout the day and night. We spent several weekends each summer cutting wood to cook with.

But as our family has grown (7 babies in 6 years), we needed to become more efficient. So we switched to using tubing and vacuum. We use reverse osmosis to concentrate the sap for shortened cooking times. Our kids still get to help, and we can spend more time as a family—which is what the Sap Shack is all about.
