Sippl's Sap Shack Pure Wisconsin maple syrup producer located in Northeastern Wisconsin. Bringing families to the dinner table since 2010. Sippl's Sap Shack is a family owned and operated business producing pure Wisconsin maple syrup in Birnamwood, Wisconsin.

When the guys started the Sap Shack, they started with all buckets. We collected for 12 hours a day, with groups of 10-20 people helping. We also had a crew at the sap shack who kept cooking throughout the day and night. We spent several weekends each summer cutting wood to cook with.

But as our family has grown (7 babies in 6 years), we needed to become more efficient. So we switched to using tubing and vacuum. We use reverse osmosis to concentrate the sap for shortened cooking times. Our kids still get to help, and we can spend more time as a family—which is what the Sap Shack is all about.

This was one of our sample bottles from last weekend. Syrup was pretty light for our standards. Most of our customers prefer the more robust maple flavor found in darker syrup (as do we). But it was absolutely delicious on our Sunday morning pancake brunch!

Nothing like the feeling of seeing barrels of syrup pile up! This is shaping up to be a good year so far.

Did you know that our syrup is initially finished into 55 gallon barrels? When we need to bottle it, we reheat a 55 gallon batch to 180 degrees, filter it using a large filter press to remove sediment, and then use a bottler for easy filling of bottles. We can sell it in the barrels as well.

The guys have been busy tapping the last few weekends, and it looks to be an early year for us (about 3 weeks). Larry hauled the first load of sap on Wednesday, and this weekend will be the first weekend we're cooking. The little guys are all excited to get back out and help grandma and grandpa tap some buckets this weekend.

CFC PTO School Annual Holiday Show

What a bummer. Looks like you’ll have to wait until 2021 to see us at the CFC craft fair! But never fear, you can still get your syrup!

It is with an extremely heavy heart that the C-FC PTO has to officially announce the cancellation of the C-FC School Holiday Craft Fair this Dec. It is our intent to keep all booth fees paid and roll the vendor booth map over to the next scheduled show on Sat, December 4th, 2021.

In the next few weeks all confirmed vendors (who have paid booth fees for the show) will be contacted via a mass email. You will be provided an updated copy of the booth map for review with a guarantee of your spot in 2021.

If you have any questions in the meantime, you can comment here or message privately to [email protected]. You may also use this email to request an application to be added to our waiting list for the Dec 4th, 2021 show.

It’s been a hot minute syrup lovers! What have you been using syrup for this summer!? Anything fun?

We made “pancake waffles”, which are waaay better than regular waffles and regular pancakes. At least according to a picky 4 year old they are!

Well folks, it’s been a strange year. We ended sap season a few weeks ago. It wasn’t a horrible year, but we’ve had better. We have plenty of bootiful (according to our 4 year old) syrup if you need any!

Sorry for the hiatus, but we’ve been blessed with two new little sappers added to the family in October.

John and Larry will be at the CFC Craft Fair on Saturday, December 7th at the CFC school. If you’re in need of syrup for Christmas gifts, it’s a great way to pick some up.

I used 1/2 cup maple syrup to make gluten-free oatmeal muffins. You can fine the recipe at yummymummykitchen.com. Delicious.
