The first of the cactus blossoms has started. On this wet and surprisingly chilly April Saturday, I'm making a surprise off-season batch of prickly pear syrup from a supply of frozen tunas from last year's harvest. Does this mean my entire Saturday is accounted for by this ridiculously tedious process? Yes. Does this mean 2026 is the first year Pedernales Prickly Pears will have syrup available for Cinco de Mayo? Also yes!
