I want to take a minute to give a well deserved shoutout to Dale Schmidt, owner of Schmidt Equipment.

I’ve worked with Schmidt Equipment over the years while managing and working in other meat departments, and they have always been top notch. Now, going through the process of building 701 Butchery & Smokehouse, I’ve gotten to experience that same level of service firsthand as an owner.

Dale has personally driven out to our facility twice just to make sure our equipment, layout, and setup are going to operate correctly and efficiently. He’s also given me a lot of great pointers along the way that have really helped as we continue through this build.

Schmidt Equipment is a family-run, generational business, which is something I have a lot of respect for. Dale’s family also has roots right here in our area, with his grandparents growing up around Loose Creek and Frankenstein.

His pricing has been fair, and every employee I’ve dealt with at Schmidt Equipment has been great to work with.

Building a business from the ground up takes a lot of good people working together, and Dale and his crew have gone above and beyond to help us get things right.

Thank you, Dale and everyone at Schmidt Equipment, for the years of great service and for everything you’re doing to help 701 Butchery & Smokehouse get one step closer to opening our doors!

This is a big progress week for 701 Butchery & Smokehouse!

The building is now completely sheeted on the exterior, and the interior framing is nearly finished. It’s pretty exciting to finally be able to walk through the building and see each room taking shape the way we’ve planned it.

I also made the trip to Schmidt Equipment & Supply in St. Louis and spent some time going through equipment for the shop. We were able to get our equipment selections lined out, including one of the pieces I’m especially excited about our smokehouse. Seeing all of this equipment in person and putting together what will eventually become the working side of 701 made this project feel a whole lot more real.

Another major step: our rail system has been delivered! Work is currently underway getting it constructed and installed inside the shop. That system is going to be the backbone of our whole animal processing operation, so seeing those pieces finally come together is a milestone in itself.

Our exterior metal has also been ordered. Before it goes on, we’re working to get the back corrals and front porch poured and framed, and we’re hoping to knock that out this week. Once that’s finished, we should be ready to start putting metal on the building and that’s when the outside is really going to start looking like 701 Butchery & Smokehouse.

A lot of planning, decisions, long days and moving pieces have gone into getting us to this point. Every week we get a little closer to opening the doors and doing what this entire project was built around: butchery, culinary work and charcuterie while providing our community with a quality local product we can be proud of.

701 Butchery & Smokehouse, Weekly Update

Another big week of progress at 701 Butchery & Smokehouse!

This week we successfully set all of our trusses and custom-built gable ends. It was a big job that required bringing in a crane, but everything went up exactly like we wanted. We also got the roof completely sheeted and the gutter boards installed, so the building is really starting to take shape.

Behind the scenes, we met with our electrician and laid out the game plan for the next phase of electrical work. We also officially called in our metal, doors, and windows, so we're getting closer and closer to having this building dried in.

Every week it looks a little less like a construction site and a little more like the future home of 701 Butchery & Smokehouse.

Not a huge update this week, unfortunately, but we still kept things moving forward at 701 Butchery & Smokehouse.

The weather threw us off a couple of days, and we’re still waiting on the crane to get our trusses set. Instead of sitting around, we went ahead and started framing some of the interior while we wait. We also built our custom gable ends this week so they’re ready to go up with the trusses.

I also walked the building with our insulation contractor to get a game plan together for the remaining insulation, finalized our plan with Three Rivers Electric, and set up a time this week to walk the building with the guy who will be fabricating and installing our overhead rail system.

Our equipment shopping trip also got pushed back because of some sickness, so that has been moved to this coming week.

Coming up this week, the trusses and gable ends are scheduled to be set Tuesday, with the roof getting sheeted Tuesday and Wednesday. We’ll also be installing the exterior windows and doors. By the end of the week, it should really start looking like a finished-in building!

Not every week is a huge transformation, but there are a lot of moving parts behind the scenes. We’re keeping after it and getting closer every week.

701 Butchery & Smokehouse, Weekly Build Update!

Another solid week of progress on the shop!

Last week, we were sitting at about half of the exterior framing complete. This week, the entire exterior has been framed and sheeted, and the building is really starting to take shape.

We had originally planned to set the trusses on Thursday, but we had to change the game plan a little because of our custom-built gable ends. They're too heavy for the truss company's boom truck, so we'll be bringing in a crane to get those set safely and correctly.

We also officially picked and ordered our exterior metal colors this week. We made a few small changes to the structure along the way, nothing major, just fine-tuning things as we go and making sure everything is exactly how we want it before moving on.

On the mechanical side, we're finalizing details with the HVAC and refrigeration. Once we have those numbers finalized, our electricians can determine exactly what size amperage panel we'll need to handle the entire facility. 3 Rivers is patiently waiting on us to get those final numbers together.

Equipment shopping is also getting ready to begin. I'm lining out a date with the owner of Schmitt Equipment. He wants to walk me through their equipment and help me start putting together exactly what we need for the shop, so I'm definitely looking forward to that trip.

There's a lot happening behind the scenes right now. Some weeks it's big, visible progress, and other weeks it's making a hundred little decisions that have to be right before the next phase can happen. While staying in USDA code.

701 Butchery & Smokehouse, Build Update

We’re making some serious progress!

About a third of the framing is now complete, and framing will continue Monday through Wednesday. On Thursday, the trusses are scheduled to be delivered and set, which will be another big step toward getting this building closed in.

I’m also hoping to do some equipment shopping this coming week, which I’ve definitely been looking forward to.

Last Thursday was a big planning day as well. I met with our HVAC contractor and electrician and worked through the final details. Everything from simple overhead light placement to calculating our electrical amperage loads and finalizing the temperatures for every cooler, the freezer, and the processing room.

There are a lot of little details that go into building a butcher shop that most people will never see, but every one of them matters. We’re trying to get it right the first time and build a facility that will serve our customers and community for many years to come.

The walls are going up, the details are getting locked in, and 701 Butchery & Smokehouse is starting to look a whole lot more real.

Another productive week at 701 Butchery & Smokehouse!

This week has been all about dialing in the details and bringing the vision together.

Windows have been selected. Doors have been selected. We've finalized the overall game plan for the build. The front of the building is getting a custom design that will make it both functional and aesthetically welcoming. Framing has officially begun, with layout lines snapped and the first framing completed. The well drilling crew is scheduled to start on Monday.

A lot of this week's work happened behind the scenes, but these are the decisions that make the difference in the finished product. We're tightening everything up, making sure every detail is right, and building this shop the way we've envisioned it from day one.

Things are moving forward, and from here on out you'll start seeing even more visible progress each week. Thank you to everyone following along and supporting this dream! We can't wait to share what's coming next!

As we get closer to opening, we'll begin pulling back the curtain on everything that 701 Butchery & Smokehouse will offer. We'll be sharing more about our custom butchery services, retail meats, handcrafted sausages, smoked meats, bacon, jerky, snack sticks, charcuterie, specialty products, and the many other items that will be made right here IN-HOUSE. There are a lot of exciting things in the works, and we can't wait to show you what we've been building.

Not a huge amount of progress to report this week, but it's an important step.

The lumber package was delivered Thursday, and seeing it all stacked on site makes things feel very real. Now everything is in place for the next big milestone.

Framing begins next week!

From here on out, the building should start changing almost daily. I'll be posting more regular updates as the walls go up and the vision for 701 Butchery & Smokehouse really starts to take shape.

Another big step forward for 701 Butchery & Smokehouse.

Things are still moving along right on schedule. This stage just happens to be one of the slower parts of the process. In these pictures, the crew is setting the stem walls, which are scheduled to be poured this Monday.

It’s been exciting watching this project slowly come to life piece by piece. Every step gets us one step closer to opening the doors and bringing an old-world style butcher shop experience to the community.

I’ll post more updates and pictures Monday after the pour, along with the finished product once the forms come off. We truly appreciate everyone following along and supporting this dream.
