It may be rainy, chilly, and starting to feel a whole lot more like fall around here, but we're not quite ready to put summer away.

Salmon skin crisps beautifully over heat, but its value goes beyond texture. Along with the layer just beneath it, it’s a natural source of omega-3 fatty acids and helps protect the tender flesh as it cooks.
