I know I've been a little quiet over here, but let me give you a life update - and a little introduction since I haven't done that in awhile!
Hi! I’m Taylor—most of you know me as the cake lady behind . What you might not know is where this whole journey started.
On August 19, 2015, I walked into North Georgia Tech as a 17-year-old dual-enrollment student ready to get her Baking & Pastry Specialist Certificate. That spark led me to Savannah Tech to earn my Pastry degree—where I trained in sugar work, chocolate artistry, artisan breads, and wedding cakes, even spending a month interning in France.
In April 2020, after hitting burnout from working in other bakeries, I launched The Messy Baking Co. to focus on custom weddings, and I’ve loved every single minute of building it (well… except maybe the dishes). In early 2025, I finally quit my part time job to do TMBC full time by adding wholesale to my offerings.
Over the summer, I had some interesting conversations and a crazy opportunity come up which led to...
On August 20, 2025—literally 10 years and 1 day after taking my first class—I stepped into the classroom as a Chef Instructor to help NGTC reopen their culinary program, which sadly closed during covid.
This has now turned into building a brand-new Pastry Campus in Blairsville from the ground up. It doesn't get more full-circle than that. 🥹
Don't worry—The Messy Baking Co. isn't going anywhere! I’m still crafting wedding cakes. But I've started a new Instagram account, is where I'll be sharing the other side of my kitchen life:
🔬 The science & precision behind professional pastry
🎓 Mini lessons that you can learn along with students
👩🍳 Some behind the scenes of a chef instructor and some Messy Baking thrown in
It’s all about combining the art + science of pastry. Thank you for being part of the TMBC journey for 6+ years now... I'd love for you to follow along for this next chapter!
